Less presence of other instrumentation allows the sound engineer / mixing guy to give her voice much more room in the mix and that makes us hear more aspects of her singing that usually would get crushed or lost in a regular loud compressed pop mix. I agree that some of her songs are more enjoyable in this format or even with a full band but played live with a more "open" mix. The version of "Thinking Bout You" from this sessions is a perfect example of that.
