Her singing career as the unrivaled "Dance Queen" began in May 1987 with the release of her first album, New Season. She differed from many other female Idol Singers in Japan in that she wrote her own lyrics and some music for her albums. She also played drums on most of the tracks, as well as piano, clarinet, and other instruments. Her advertising jingles were hits into the mid 1990s in television commercials for such goods as chocolate and gin. She has also made numerous appearances on Japanese game and talent shows and is still a household name. In twelve years after her debut she released seventeen albums and created a cult following of otaku fanboys.
Some say that she displaced Yoko Oginome as the reigning "Dance Queen" of the mid to late 1980's. Yoko's singing career faded as Chisato's rose and endured far longer.

The song "Rock'n Omelette" by Chisato Moritaka, centers around the relationship between Mama, Papa, and their delicious omelette-making rituals. The first verse expresses how Mama and Papa have a great relationship, and rarely fight. Their secret, it turns out, is Mama's omelette that's so good, once you've had it, Sukiyaki and Shabu-shabu wouldn't even compare.
The second verse highlights how being good at making omelettes is equivalent to being good at cooking, which in turn is equivalent to being good at showing love. Even Papa, who is well-loved by Mama, can't resist her omelettes, and it's not clear what kind of taste Papa's omelettes have, but they're sure to have the sweet taste of his love for Mama.
The final verse reveals that Papa is a hardworking man who eats Mama's omelettes every morning, and he's doing it right now. Mama, tough is still good at love, and Papa is getting better at being loved too. Overall, the song expresses how something as simple as a delicious omelette can be a symbol of love, showcase culinary skills and how every person in a family is interconnected.
