The second line describes the setting, in the fields where the shepherds were keeping their sheep. The verse then goes on to describe the cold winter's night that was so deep. The chorus repeats the message of the angels, which is that the King of Israel has been born, and we should rejoice and celebrate his birth.
The second verse describes how the shepherds saw a star shining in the east and followed it to Bethlehem, where it stopped above the place where Jesus was born. This star was said to have great light, which continued both day and night. The chorus is repeated three times, signaling the depth of joy and celebration that should accompany the news of the birth of Jesus.
