I am glad you had a off the grid hot water system that is still using the grid as backup (mouth full)
It's a lot more controllable than the other hot water systems out there, such as the antifreeze method.
The antifreeze method works like this, your solar panels generate electricity and heat (that's where most of the inefficiency comes in) then it loops around using a pump connected to solar, a small 12-48v DC pump and then dumps it into your hot water tank at the bottom , then the cold water at the bottom cools the antifreeze, then sends it back to the antifreeze tank to happily go another round.
Disadvantage is... it works too well, your hot water tank then has hot water beyond 75c, I would say at near 99.9c (boiling point) and it would need to be mixed with cold water for it to be usable hot water.
How it works is this way, think of radiator in a car (you have 2 of them, the heater and the front radiator)
"why don't you just use water?" the copper taste is disgusting when cycled through, heating and cooling cycles... and then there's the inefficient parts where the boiling point of antifreeze is higher (50/50 mix) and a much lower freezing point than water, it doesn't cause rust, in fact there's rust inhibitors inside so the copper tubing will last longer from the inside... downside of the rust inhibitors is that it eats away the plastic in water cooled PC's (jayzcents done a show and tell on that one)
So, whether your install is right for you is not me to judge, you are an education channel and also a part time "watch me freak out when I fuck up but I solve it with you"
There has been times with hot water systems blowing up when they use the antifreeze method because they do not vent the pressure (amateur installs) I am not one of those people that will say "you will be in danger" because you seem to be doing more research than you are showing us

Excellent Job ! I'm very glad to see your still moving forward with using all the power you produce. There are several ways to do this. It can be so cheap I don't know why anyone wouldn't do it. People just need to do some research before diving in.

dc hot water coil and a simple charge controller that diverts the power to the coil. total cost about 40 dollars on eBay. I sent you the links several times. The best way is one dc element in the heater and one ac element. that way you get hot water all the time.
