There are four versions: the orchestral version is the first, and original conception of the work, finished in time for its first performance in Cadiz at Lent 1787; it is I think the best version (though the choral version comes a close second).

The choral version Haydn first performed in 1796, with a small number of additions such as the a cappella intoning of the seven Latin statements; the extraordinarily bleak, minor key interlude; and with its expanded orchestration - clarinets, trombones, and an additional flute - is also a very fine work, and is essential listening.

The quartet version (1787) was made by Haydn, ever the pragmatic businessman, probably to get the job done before someone else did!
It is simply an arrangement, and with stretches of melody and chordal accompaniment, it is not true idiomatic quartet writing.
I think the quartet version is over-played and over-rated and loses so much in comparison to the original.

In 1787, Haydn authorised a piano version; it is useful for a pianist to get inside the work, but again, beyond that, it was simply the publisher Artaria cashing in on the almost immediate pan-European success of the original.

In summary:
Seek out the orchestral original (*****), and the choral version (****).

The piano version (**) sanctioned by, but not done by Haydn, may be played through for your own enjoyment,
...but if you never hear the string quartet version (*), you will not have missed much.

In fact, I would question why any professional string quartet would choose to play this arrangement (listed as Opus 51, or more correctly Hob. XX: 50-56), rather than any of the 68 original quartets, the least of which offers you so much more as genuine string quartet music.

@Elaine Blackhurst Playing the quartet version in a packed church was a revelation for me. No other quartet piece is written like this, with 7 slow movement, yet colourful and expressive. It is indeed an arrangement, but works just fine, in given spaces and circumstances. Interestingly, it is very carefully notated by Haydn, apparently he put more care in it, than the choral version.
