I came up with a Greg build after watching this video more times than anyone should care to admit. I probably put way too much thought into this, but here it is. This is by no means a good build, and may not even end up being a fun one, but to me it feels the most accurate to how he'd actually translate into the game. If you actually want to somewhat enjoy this concept, I recommend getting a mod such as Better Cities and just chilling out exploring towns and mingling with people, since I imagine anyone actually wanting to play as Greg would want to explore the quaint side of things. I also recommend an alternate start mod, since I don't really see him being the Chosen One to serve the most ill-fated of the Septims. And any other mods you can find that lend themselves towards less adventurous gameplay. If you can find the old Living in Oblivion series starring Nondrick, it's a great guide to how I think Greg would generally act. Or you could take the opposite approach and have him just be a purposefully awkward build to try and scrape through the game with. Because that could also be funny.

Race: Breton (People generally seem to agree on this. He's noticeably short when compared to others, but overall plain looking. So Breton fits. He'll also get some magic resistance which is always useful for someone who would probably never dungeon crawl, and some bonuses to magic skills that he either doesn't have or will likely never use.)
Birthsign: Steed (He's very active with a good amount of his adventures focused on being outdoors or doing some kind of physical exertion. Warrior seemed too aggressive for him, and Thief was too dishonest, so Steed is what I went with)
Specialization: Stealth (Stealth contains most of the pacifist-oriented skills since I don't think he would do much fighting if he can help it. Keep in mind stealth in Oblivion isn't just sneaking around, sniping enemies and stealing things, it also involves persuasion and cunning. Not that Greg could exactly be described as cunning, but he's not quite a warrior or a wizard either.)
Attributes:
Strength (He's strong, or at least he claims. But he does seem to carry heavy things a lot, and a part of me also feels like he'd be carrying around a lot of random junk so he needs a big inventory.)
Personality (Yes, the worst attribute in the game. I warned you this build is on the memey side. But a guy who likes to chatter should be charming. He'll have lots of friends. Or the closest one can get to a friend in Oblivion, which is to say he'll have lots of creepy strangers telling him he has the hands of a healer.)
Skills:
Athletics (He loves running, swimming and biking and is frequently seen outdoors, so this one made sense to me. He also tends to run from combat rather than get involved, so along with Steed, this should make him pretty fast.)
Speechcraft (Every episode involves dialogue, so this is probably his most obvious skill. And he speaks Spanish.)
Mercantile (Both of his extended specials are related to this skill, with one having him buying alchemy ingredients and the other seeing him get a large quest reward. Plus we don't want him getting cheated at the store. He seems to prefer hoarding his money rather than spending it judging by his preference for plain clothes and small houses. And Better Cities will actually let you put it in a bank, if you install that mod. Otherwise you can just say he hides it all in his mattress in the waterfront shack.)
Armorer (We see him working with his hands a few times. Cutting boards, winding cables. He also seems to prefer blue collar jobs, so he should have some carpentry and smithing skills)
Alchemy (It's the closest equivalent to how often we see him cooking. Just pretend every potion is a milkshake and this one will make perfect sense. Plus he needs something to sell with his mercantile)
Blade (Inevitably he will have to fight some psychotic wolves and overly ambitious bandits while out for a leisurely run, and we can see by the HUD he always has a steel shortsword equipped. But ultimately Greg is a peaceful man who would prefer not to draw his blade if he can avoid it. Then again, he does occasionally seem to have a hidden dark side. What does he dig so many holes for? Also if playing the class exactly as written, Armorer would be a useless skill unless he has a weapon to repair, so there's that.)
Restoration (Along with his shortsword, he also has some form of healing spell equipped. And with how often he bangs his knee on furniture and nearly falls off the roof without an acrobatics skill to save him, he'll need to be able to deal with any scrapes he picks up.)

i had that stream playing nearly every day for the ALMOST year it was ran for. Started sometime in October 2021 and ran for like 9 months or so, stopped streaming for a bit, then came back on sometime later.

Sad it won't be back on anymore, but at least it's here as a video.
