Originally, Gregorian was conceived as a more pop-oriented group in the vein of Enigma. Under this concept, they recorded the 1991 album Sadisfaction, with lead vocals provided by The Sisters of Oz: Susana Espelleta (Peterson's wife at the time) and Birgit Freud. However, this was the only album in that style.
In 1998, Peterson and his team Jan-Eric Kohrs, Michael Soltau and Carsten Heusmann re-invented the project to perform popular songs in the Gregorian style. The criteria for song selection were strict; in order to be considered, a song needed to be translatable into the 7-tone scale. For each album, songs were carefully chosen in addition to original songs written by Jan-Eric Kohrs, Amelia Brightman and Carsten Heussman. Twelve vocalists - previously acclaimed session and choir singers - were then hired to record the tracks.
Each Gregorian album is initially digitally tracked at Nemo Studios, Peterson's Hamburg studio. The vocalists then record their parts in a church atmosphere with dimmed lights and candles, in order to escape what Peterson referred to in a 2001 interview as the "cold and technical" studio atmosphere.
The concept proved to be successful, and the group proceeded to record several more Masters of Chant albums in the same style. Their 2004 album, The Dark Side, was a slight departure from the others, featuring a darker repertoire consistent with the title.
In 2005, The Masterpieces, a compilation album with a live DVD, was released. A fifth Masters of Chant album was released on 31 March 2006. In 2006, a festive album was also released, titled Christmas Chants. A sixth Masters of Chant album was released on 28 September 2007. In 2009 a seventh Masters of Chant album followed.

On 8 September 2010 the next album, titled The Dark Side of Chant, was announced to be published on 15 October 2010.
The members of the Gregorian choir group are Richard Naxton (Naxos), Johnny Clucas (Johnny), Chris Tickner (Chris T.), Richard Collier (Rich), Gerry O'Beirne (Gerry), Lawrence White (Lorro) and Rob Fardell (Rob F.).
Others who contribute to the vocals or sound of Gregorian are Sarah Brightman (under the pseudonyms Hepsibah or Sarah Hellmann), Amelia Brightman (Sarah Brightman's younger sister), Frank Peterson, and staff of Nemo Studio among others.

The lyrics to the song "Guide Me God" by Gregorian are an earnest plea to find God's guidance and support. The repetition of "I will always know" reinforces the singer's conviction that God is always present, even if unseen. When the singer asks for God's guidance, they express the belief that if they seek, they will find. The repetition of "Guide me God and I will find you" reinforces the idea that the singer is open to receiving God's direction and is willing to follow where it leads. The final plea, "Guide me God, I will come then and find you," suggests that the act of seeking God's guidance will itself bring the singer closer to God.
The lyrics reflect a deeply spiritual and introspective mood, and are backed by Gregorian's signature chant-style music, which is characterized by haunting melodies and rich vocal harmonies. The song's meditative feel may inspire listeners to reflect on their own relationship with God and to seek out their own guidance in life.

My friend in time you are always there ...
I abide in thy even if they defy you ...
Like the inner steps of the child ...
I will always know with the eyes of truth ...
Guide me god and I will find you ...
Find my peace beside you as it heals my soul ...
Are you here? For the stillness that calms my heart ...
Can I commune to strengthen myself and overcome my burdens to be ...
In a deeper perspective of words lost and forgotten through time ...
Let me know in time the wrong from right and I will vow and abide ...
For I do not wish this soul to be lost ...
Keep a deeper friendship without hurt in social care ...
A little less careless within the gray and emptiness ...
Light the flame and warm the hearts of many within hope ...
An everlasting light that guides me god and I will find you ...
Watchover and pray for the world that carries all in a loving embrace ...
May that kind of love be no sacrifice a gift fragile yet fair as the child to be ...
As people grow and see each other to truly feel and understand the inner beauty ...
In a sense that guides me god and I will find you within my sanctuary the doors of our mind ...
To explain, see and feel that guidance in a righteous way confronting flaws of the past as well ...
So that I can learn to see new ways and meditate to open my mind to change ...
Shifting shapes as whispers and words can unfold a deeper meaning in which you opened my eyes ...
Healing the peace and quiet within my mind, body, and soul to accept and forgive within sacred tears ...
