I am wondering about using “real egg whites” vs egg white protein powder? I too use Maria Emirate’s recipe and find I would like to adapt using your modifications; however, I have a flock of chickens! I’d hate not to use my eggs for whites. I get the whole egg powder though and will purchase from your shop links. Thanks, Joanne

Thanks for the work experimenting on this. One note: I just made this with the old recipe (using real eggs) and saved out 4 egg yolks to add at the end. Excellent results, at least comparable to your own. Much cheaper and more convenient than the whole egg powder. I don't think you should write off real egg yolks so quickly.

@Yolanda Helfrich I used fresh eggs from my own hens. I separated the whites, added yolks (as above) and the second time actually added the egg powder instead. Both sunk, just as the original Emmerich recipe ( so I guess that's 3 times I've tried now). otherwise, I am trying to follow the directions meticulously. The "batter" looked and acted like in the video when going into the pan. My husband thinks its low altitude (we are at sea level); but, I don't think that applies with this recipe. I just wish I could get it to work with fresh eggs is all.

@janqlan what do you think you did different to make that happen? Did you use the powder ingredients or the fresh?

I am glad yours came out. Twice now mine has sunk horribly. It's really emotionally deflating (ha ha). I feel so wasteful.
