As someone who worked at like 4 Pizza places (none were chains) I can tell you, screens don't stay silver long, BUT the one she had was pretty bad. You dont have to clean them as often because of the almost constant burning, but they shouldn't get so bad you can't see through them lol

I thought it was seriously gross when I first started the video, but I remembered that you “season” cast iron pans. After the explanation that it’s pretty much the same thing, I literally said out loud “that makes sense”. As long as the bottom of your actual 🍕 or 🥖 isn’t burnt, it’s fine. They showed how the extreme heat of the pizza ovens does take care of germs/bacteria. I’m very satisfied with the conclusion.

I worked in a Pizza place and we only used the screens to make chips from the dough. We also made pan pizzas using butter so it doesn't stick to the pan that we use. After we just wiped it clean after. I would run my hands in the pan to make sure there is no left over foods everytime nothing.

Not all pizza places uses these screens. Especially local small pizza joints. They use flour to cook their pizza.

A good layer of seasoning should handle being washed. If the coating is too weak to hold, then it all needs to come off, and the item needs to restart the seasoning process.

Worked pizza for over 10 years. The coloration of the screen is called “seasoning”, the same as on cast iron cookware, except it occurs normally during the cooking process and can’t be removed. HOWEVER, that burnt, crusty stuff clogging all the holes through the screen is nasty and should’ve been scraped off way before it got to that point.
The ovens run over 400 degrees and sanitize anything that goes inside them so that screen isn’t “dirty” per sae, it’s just burnt. When screens are new and silvery everything sticks to them terribly so standard protocol is to spray oil them and toss them in the ovens till they’re good and burnt (seasoned) before ever putting food on them to cook.

I worked at Papa Johns some 20 years ago. I can verify the screens that pizza's and everything else is cooked on, do not get washed! They just get used over, and over again, and again. When I worked there, once screens got as bad as the one shown, they got bent and pitched in the can! Nothing gross about it. the heat in the over kills off anything that you "think" might be on it. I used them to cook my own food all the time!

I worked at a pizza place. We cleaned our pans at the end of the night with a clean brush to knock off food. The pans get grease baked onto them and as you see it is nearly impossible to get it off. The pans have holes in them to let the heat through and it bakes the crust quickly and crispy. They are run through extremely hot ovens and are perfectly fine.

A mapgas plumbers hand torch purchased at any hardware store for 40$ including the gas would have got this to a brand new state in about 2 minutes. When the steel is red hot the carbon buildup crumbles off because it's too hot to stick and the metal expands. In the time it took to watch this video, 6 screens of this condition could have been restored to store bought finish.

I can also confirm this is how we clean our screens of carbon buildup. Our kitchen has a rulebook for deep cleaning and the grill/screen section has a highlighted quote on how to get them shiny clean again: "Red hot=Store bought"

I've been making pizza from scratch for over 15 years at home using the same 2 pizza screens. The entire point of using a screen is so the moisture can escape from the crust and if the screens are that clogged and disgusting they won't function as intended. After 15 years our screens are still in perfect condition as we clean them after every use. This is just another reason why we cook every meal at home from scratch...the best restaurant is our home kitchen.

"Karen" is becoming an overused insult at this point, first of all, the videos had more of a comedic tone, second there's nothing "Karen" about questioning the hygiene of a food restaurant if they send you a visibly dirty pan with your food, like, common the thing had holes! I worked in a smaller scale chain restaraunt and cleaned the Pizza pans/screens, etc. every day after closing, sometimes it's hard but I got them clean. Another restaraunt in the same chain needed a dishwasher on short notice so my boss drove me over there to help out, at the end of the shift I went to get the pizza pans and the screens were black, crusted and had stuff embedded in the screens so they weren't even screens anymore, I started soaking them while I cleaned the kitchen and the manager, my usual boss' cousin, told me they never wash those 'because it ruins them', they believed the black crust building on them was perfectly normal and okay.
Both the same local chain, owned by the same family, but very different ideas about how things are done.

Papa johns isn’t the only one. I worked at several other places and just regular trays have the black/brown carbon on them. These trays were used to cook biscuits. We were washed, sanitize and air dry but the carbon would not come off. When they got in bad condition we replaced them.

pizza pans should not be cleaned, they get seasoned just like a cast iron and are meant to be kept that way. it allows for a non stick surface to form and allow the pizza to come off the pan. it also in my experience effects the flavor of the dough. And my source for this info is i was a supervisor for a Whole foods market prep foods.

I worked at Domino's, it's the same basic story there. If a screen hits the floor it goes back to get sanitized. Occasionally, we had this big tub of acid that things (deep dish pans that DO get washed regularly, baking screens, ect.) got soaked in for a while. The black stuff came off in that and was silver again.

Hello am a practice doctor here some few tip's if you get the same thing in food
1.if a food has some weird taste or look dont eat it i can make you sick or much worse when it come to food.
2.if some how eat one and didnt know it fast if you felt your body is not good you can go to the doctor or rest for 1 day if you felt the same pain go the doctor.
3.always make sure your pan or kitchen item that is use for cooking 100% clean some can be miss so always check 3 time to be sure

they are basically like my cast iron skillets and the way I clean them is when the build up get to a certain point I put them in the oven on the cleaning cycle and it backs off the extra gunk

The easiest way to clean the grid when it is that bad would be to use a 4 inch angle grinder with a wire brush (stainless) on it(rub lightly) . Then rinse, add a little veg oil and put through a heating cycle. It will fix all the loose carbon as the oil turns to varnish then carbon.

I worked at a Casey's 30 years ago. Love their pizza! I appropriated one of the pizza screens they use and I still have it. I love making pizza and I use it all the time. I soaked it in Easy-Off oven cleaner once a few years ago and got it back to it's original steel color but totally regretted it...it took a while to re-season the pan. It's back to a dirty brown/black color now and bakes beautifully crisp pizzas that don't stick to it.
You definitely want that season on certain bakeware.

I figured it just underwent a ton of seasoning. Seasoning a pan used to sound weird to me but I got used to it when I learned a little more about chemistry. For a lot of baked items, the pans are never cleaned. Bread pans, muffin pans, pizza pans, etc. The baking temperature kills everything and if you clean them, the baked item will stick.

When you get a new shiny screen, you spray it with pam and run it thru the oven without anything on it. that is called seasoning the screen. you may repeat his process several times, so you get a dark brown coating on it so that the pizza does not stick to the screen. after using for a while, you will clean the screens by putting them thru the oven again burning off the baked-on stuff but still leaving the seasoning to keep them from sticking...roughly the same way you should clean your backyard grill... It's not gross it is simple reality.

It stays on there. The freeze will go to a golden yellow and get real sticky. That’s the only time you’ll be able to get it off. It’ll be really easy on the hard chunks of golden sticky honey looking stuff; it’ll come off but you need degreaser and a good scraper + elbow grease. But once the pan is black, it starts beating becoming part of the metal.

I don't know it really depends on where you go. I've worked in the food service industry for 6 years and the CLEANEST kitchen I've ever seen was when I worked at Raising Canes. Granted that was my only fast food job, but no restaurant I've ever worked at has been that clean

As a wife of a papa john’s manager myself, they don’t wash those pans at all, and neither do they at Pizza Hut or dominos either. My husband has worked at all 3 pizza chains and they don’t wash their pans.. this is completely true. The way they “ clean “ pans is to run them through the oven conveyer belt one more time around, that is only if food is still stuck to it, otherwise it goes back up on a shelf to cool off or immiedietly is used for another pizza to be made on, etc etc, when wings are cooked they place a parchment paper over the pans, and something a lot of people don’t know or understand, a pizza nor bread sticks or cheese ticks actually “stick” to these pans, between the build of “gunk” and the heat of the oven, the dough actually rises and essentially doesn’t touch the pan the entire time it goes through the oven

You should look into little Caesars I used to work there and they would get mad at me for deep cleaning pans and things that needed it. They didn't want to pay overtime for employees to clean because we were franchise owned. I ended up quitting and couldn't do it anymore!

how is ayla a "karen" for being concerned about something that she is ingesting? i think its completely normal for her to be concerned especially since shes not educated on how pizzas are made. while darkened pizza pans arent dirty, i think we can all agree on the fact that ayla's has definitely gone beyond the normal "dirt"

as a chef myself, here in the philippines, we clean all of our seasoned cook ware with just water and bamboo brush, we always mentain washing it after use, we always washing it many many times per day, we cook, we put it on the drain and our washer cleans it and dry it so we could use it again.

I worked at 3 pizza places and went to several different locations. Nobody washes these and never think the vegetarian pizza is really a veggie. Also the things that happen to toppings, just don't order pizza.

Yeah, if you do enough cooking you'll know that this is what happens with these types of things.. that said, If the holes are completely clogged up, then its not working as designed. The holes need to be open so the heat can get to the bottom of the food and the gases can exit. Soo, In future, If you need to clean something like this, Carefully used a pallet knife to get the main crud off and re-season and go. Don' worry about it looking pristine, the stuff is just inert carbon at this point and likely bonded to the metal, or near enough as to make no odds. **If you have non-stick items however**: do not scrape, discard and buy stuff without the non-stick, like a pizza stone. You don't need teflon in your lungs.

It's called seasoning seasoned pans are used by chefs everywhere just like a wok ...you don't wash it and scrub the seasoning off you clean it by adding oil and bring it in to smokes point and rubbing it out with a clean cloth

I’ve never been so happy to live in NYC. We have among the arguably BEST pizza in North America - supposedly due to the water here. I don’t even think there is a chain pizza concern (Little Caesars, Domino’s, Papa Johns, etc) within NYC limits. WHEW

If it rusted, as she claimed, that means it is a steel pan, not aluminum. Steel pans require seasoning to work well, a long process of baking on layer after layer of oil onto the pan which prevents food sticking to it. Nobody is licking it and its not being cross contaminated, its just baked on corn meal and oil, perfectly normal.

I work at Pizza Hut we wash the Pizza pans many times a day the built up food on the bottom is from many Pizzas being cooked on them no Pizza pan that gets used that much is ever going to stay shiny
