Cariou started acting in Stratford, Ontario, tackling classical roles like King Lear, Macbeth, Prospero, Coriolanus, Brutus, Petruchio, Iago, Oberon, and Henry V. He was offered a scholarship at the National Theatre School of Canada in Montreal but, married with a young child and financial responsibilities, he rejected it. In 1968, Cariou made his Broadway debut in The House of Atreus. Two years later he landed his first starring role in Applause, a musical adaptation of the film All About Eve. It earned him a Tony Award nomination as Best Actor in a Musical and won him the Theatre World Award. In 1973 he garnered his second Tony nod for A Little Night Music. Six years later he won both the Tony and a Drama Desk Award for his portrayal of Sweeney Todd: The Demon Barber Of Fleet Street in the Stephen Sondheim musical. His next projects, the Alan Jay Lerner-Charles Strouse musical Dance a Little Closer (1983), Arthur Miller's sole musical, Up from Paradise (1983), and Teddy & Alice (1987) proved to be far less successful.
In 2002, Cariou joined Anne Heche and Neil Patrick Harris as the replacement cast in the award-winning drama Proof. Cariou's film credits include Flags of Our Fathers, About Schmidt, Thirteen Days, The Four Seasons, and the Harold Prince-directed screen adaptation of A Little Night Music with Elizabeth Taylor. He played the father in the 2007 film 1408. On television, Cariou has appeared in The West Wing, Law & Order, Star Trek: Voyager, The Practice, Ed, The Outer Limits, and multiple episodes of Murder, She Wrote.
Cariou narrated Major League Baseball's World Series films from 1992-1997. He has recorded a number of books, including several by Michael Connelly, for audiotape release. In 2004, he was elected to the American Theatre Hall of Fame.

I feel you
Do they think that walls can hide you?
Even now I'm at you window
I am in the dark beside you
Buried sweetly in your yellow hair
Johanna
With yellow hair
Like her?
I'd want you beautiful and pale
The way I've dreamed you were
Johanna
Johanna
And if you're beautiful, what then
With yellow hair
Like wheat?
I think we shall not meet again
My little dove
My sweet
Johanna
I'll steal you
Johanna
Good-bye Johanna
You're gone and yet you're mine
I'm fine Johanna
I'm fine
Johanna
Smoke
Smoke
Sign of the Devil
Sign of the Devil
C'iy on fire
Witch
A witch
Smell that Sir?
An evil smell
Ev’ry night at the Vesper’s bell
Smoke that comes from the mouth of hell
C'iy on fire
C'iy on fire
Mischief
Mischief
Mischief
And if I never hear your voice
My turtledove
My dear
I still have reason to rejoice,
The way ahead is clear
Johanna
I feel you
Johanna
And in the darkness
When I'm blind with what I can't forget
It's always morning in my mind
My little lamb
My pet
Johanna
You stay Johanna
(Johanna)
The way I've dreamed you are
Oh look Johanna
A star
(Buried sweetly in your yellow hair)
A shooting star
There
There
Somebody
Somebody
Look up there
Didn't I tell you?
Smell that air
C'iy on fire
Quick Sir
Run and tell
More and more like a witch's spell
There it is
There it is
The unholy smell
Tell it to the Beadle, and police as well
Tell 'em
Tell 'em
Help
Please(wrong)
Fiend (right)
C'iy on fire
C'it on fire
Mischief
Mischief
And though I'll think of you, I guess
Until the day I die
I think I miss you less and less
As everyday goes by
Johanna
Johanna
And you'd be beautiful and pale
And look too much like her
If only angels could prevail
We'd be the way we were
Johanna
I feel you
Johanna
Wake up,
Johanna
Another bright red day
We learn Johanna
To say
Good-bye
I'll steal you
Len Cariou and Angela Lansbury's song "By The Sea" is a duet between Sweeney Todd and Mrs. Lovett. The song is about Sweeney Todd's obsession with Johanna, his daughter whom he has never met. In the beginning of the song, Sweeney expresses his desire to be near Johanna and mentions her yellow hair, which he remembers from his wife. He also acknowledges that he is in the dark, indicating that his feelings towards her are not seen or known by anyone.
As the song progresses, Mrs. Lovett joins in, expressing her own desires for a better life by the sea with Sweeney. She sings about the smoke, which she believes is a "sign of the devil" and comments on the "evil smell" in the air. This symbolism can be interpreted as representing their plans to kill and dispose of those who stand in the way of their desires.
Towards the end of the song, Sweeney acknowledges that his obsession with Johanna is fading as time goes on. Despite this, he continues to express his desire for her and the life he could have had with her. The song ends with both characters saying goodbye to their fantasies by the sea.
