Can you approximate what temperature "warm" water is? Last time I tried I got it too hot because I had significant evaporation. My freezer is ~7-10°F

Do you have a method for storing ice in a freezer prior to using it? I would like to stockpile a bunch for parties etc.

John Hawkins I store like shapes in gallon ziplock bags. They keep the flavors of other things in the freezer at bay, and reduce evaporation over the long term.

i'm wondering if you have any advice for dealing with the harvesting process. the ice is brilliant, but the problem i'm having is removing the mold despite waiting upwards of ten to fifteen minutes.

@Douglas Winship thank you! i noticed that it seemed easier to remove when i was impatient the first time around and took the ice out before the 30 hours. never made the connection that not letting it go over 30 would make it significantly harder to pull out.

Manny Antunes I have much the same issue. I generally pull one side up as far as it easily goes, then the other. Then I let things sit for a minute or so (usually I take this time to set up the mold for the next job), and this lets things loosen further.
In a perfect world, if you remove the mold before the lower reservoir completely freezes solid, it is much easier to remove the whole thing.
