Bravo! I'll never understand the aversion by some people to SPAM. No, you wouldn't want to eat it every day, but at the right time, prepared the right way...it's fantastic. Everyone should keep a couple tins on hand. Best of luck to this nice man.

You're such a sweet guy and have a wonderful spirit. If I hadn't watched to the end I would never have guessed you were going through such a difficult time. A spam egg and cheese is a reallly good breakfast sandwich. Two slices of White bread lightly toasted, a thin layer of mayo, one or two eggs over easy (depending on how hungry you are) and two slices of spam(1/4 inch thich) cooked on low heat for 5 minutes per side so it gets nice and crispy, and i like my spam extra crispy so that its got a nice crunch to it on the outside but is nice and steamy on the inside. If you cook it thag exact way, then i guarantee that you will have one of the best spam breakfast sandwiches that you ever had!!

I learned that mayonnaise trick from watching a cook at a diner once. I agree it's hard to get cheese to melt without burning the bread. Hope your wife is OK!

Looks good, Jim. I don't think I've ever tried spam. Always heard it was too salty. Don't worry about burning the food. They say charcoal is good for the digestion. I think it's cooks who just burned the meal who say that. LOL!

This is NOT a grilled cheese. The general rule for a grilled cheese is "If it's a grilled cheese it technically only has bread, cheese, and butter. If you add anything to it, it's called a melt, not a grilled cheese."
