You can estimate the density of the water by averaging his body weight and size as well as the rocks with a cylinder, rounding it to 0.3m diameter and 1.9 height (accounting approximately for the rocks too), getting the following:
Volume ≈ π × (0.15 m)² × 1.9 m ≈ 0.134 m³
Now, we determine the change in water density:

68 lb = 0.134 m³ × (ρ₂ - ρ₁) × g
Convert weight in pounds to newtons (for easier procedure)
68 lb × (1 kg / 2.205 lb) × (9.81 m/s²) ≈ 301.8 N
And solve the change in density as the rocks pile up on him as
301.8 N = 0.134 m³ × (ρ₂ - ρ₁) × 9.81 m/s²
(ρ₂ - ρ₁) ≈ 301.8 N / (0.134 m³ × 9.81 m/s²) ≈ 224 kg/m³
Considering it's not pure water and seawater, were the density would usually be 1000 kg/m³, we can instead use the average for seawater at ρ₁ ≈ 1,025 kg/m³
We'll calculate the final density using the same approach as before, considering the volume of the man and the extra mass added
M_total = M_human + M_extra = 72.6 kg + 30.8 kg = 103.4 kg
Now we can calculate the volume of the man and the extra weight:
V_total = V + (M_extra / ρ_water) ≈ 0.0737 m³ + (30.8 kg / 1,025 kg/m³) ≈ 0.103 m³
Finally, we'll determine the final density of the water (ρ₂):
ρ₂ = M_total / V_total ≈ 103.4 kg / 0.103 m³ ≈ 1,005 kg/m³
In this case, considering seawater, the final density is approximately 1,005 kg/m³, indicating a very slight increase in density by him

Some tips from a local who was in the dead sea.

1. Don't go in with fresh cuts. Minimal brusing is fine but anything more than a paper cut and the pain will not go away.
Same with recently shaved areas.

2. Don't be scared to let your body float. If you're gonna roll, roll. Fighting it will make water enter your eyes and...

3. IF water enters your eyes, don't be scared. Ask a friend to lead you outside and towards one of the outdoor showers.
If alone ask somebody near you. If nobody is near you try to remember the way out. If you can't, stay put and wait. Eventually you'll be able to open your eyes.

4. Come in early morning or evening. That's when the water is cooler and the temperature is nicer outside.
Plus, fewer people will be present.

5. For men : avid ANY brusing in your groin before going in. If there's even one tiny bruise you'll have pain down there, forever.

6. If you vidit the dead sea through Israel : Chairs and alike are probably one of the hotels property. And you need to rent it for money from the hotel if you don't have a room in the hotel.

And make sure to enjoy your stay! The Negev and Arava are beautiful! Go on one of the many different trails.
And what's nice is that a 3 hour drive brings you from the desert to the lush and green views of the north.
