Based on measuring TDS from just one shot per tamper, I think the value of this experiment is approx zero. Do 100 shots from each tamper and then perhaps you’d have some useful statistics and have a chance of drawing conclusions. Even then, if you found a statistically significant difference, it might well be so small that no human being could possibly taste the difference.

Seems that in a later video you determined the OCD tool was responsible for dramatically lower extractions - as compared to tapping and WDT. Since you used the OCD tool for this test of tampers, don’t you think it likely spoiled the results of the tamper test?

Quick question, might seem very stupid but what's the name of the tool around your portafilter when you're grinding coffee? Did not find that online and would love to have a bit less coffee falling every time I grind some coffee before my shot.

Actually, that would be leeching process, not extraction. They are completely different processes.

TDS is measured in ppm or mg/l, I think the device is doing the calculations on it's own

You gotta filter before refracting. Huge margin of error here. Also, how are you only extracting 13% on a 40sec shot? You need to dial in a lot differently

@The Real Sprometheus I don't know who is advocating refracting espressos with zero filtering.

Espresso should be extracting 18%+ just like coffee. If you're using lighter roasted espresso, 21% would even be a good starting point.

I’ve heard conflicting reports on the use of filters. I used them in my next TDS experiment though. Granted they aren’t the greatest shots in terms of extraction %, but they were more so just to see if the difference tamper shape has on extraction as opposed to trying to maximize the number.

Those extractions are low for espresso. Considering samples are not filtered, real extraction is even lower. How did they taste? Even the flow looks watery.

Looking back on it I should’ve toyed with the grind a bit, and I ran them a bit longer than usually but since it was a single origin I generally prefer to run those out a bit longer since the flavors are more delicate. They were definitely sweet, but little to no mouthfeel and definitely a bit watery. The extractions were definitely low, I’m sure it had to do with the longer shot and maybe age of the coffee.

Thank you! I let the samples drop down to room temp before testing. The TDS meter I use says specifically to not do it while hot.

I just bought a Rocket Appartamento and im struggling to get it working. It makes the coffee way too fast, 18 grams in and 36 grams out in 3.4-3.8 seconds. I weigh my coffee and im putting in the right amount. I use expensive pre ground stuff called Nescafe Blend 43. It looks to be ground quite coarse but when I empty out the jar and check the granules they all look to be a very consistent size. A friend told me to use better coffee so i have tried this brand called Maccona, slightly better but I am having the same issues, less than 4.5 second brew times so i know the problem isn't the coffee i'm using.. I was told i need to tamp with more force but i'm pressing as hard as i can. I have began to use my foot to squash the tamp down really hard. This has gotten my brew times to 11 seconds but I have damaged the portafilter channels from standing on it and bending them, and my portafilter is all scratched from being pressed into the floor. Im thinking the problem might be the basket so i have ordered some VST units? Any help would be appreciated. Do they make any tamps designed to be operated by foot, ive almost rolled my ankle twice from slipping off the tamp handle, plus it makes a huge mess.

Higher brew temp = faster extraction. Try dropping your boiler temp down to 4-7 deg celcius. Maybe straight from the fridge. That should bump your extraction times up. Hope this helps.

Yep. You’d get better results by spending $400+ on a good grinder and purchasing a $300 espresso machine than using pre-ground coffee in your $1500 machine. Long as you’ve already invested that much $$$, go the extra $400+ and get a good espresso grinder.

your coffee needs to be finer. It's one of the reasons pre-ground stuff doesn't work when you're making home espresso. Highly encourage you to purchase a grinder so you can dial in the fineness exactly to get that 36g out in 25-30sec and you can also grind fresh every time

Convex Tampers are stupid, they're just a tool that promotes uneven extraction. I have a Pullman Tamper too but not the BigStep. just a 58.4 base. But I get a lot more clarity in my espresso and extraction will always be higher with it as opposed to a convex tamper! they just make sense. Also, love the video production and quality! Keep it up, dude!

I agree. The tamper should be the same shape as the shower screen, so that when the puck expands, it doesn't have one part touch the screen first and risk cracking. If I don't have a flat bottom tamper (with a curled lip preferably), I use another basket to tamp.

@The Real Sprometheus Thanks you for that quick answer. I understand that all those variables can be changed according to your liking and taste and this is also I experimented with. However, I also wanted to be close to a true Italian espresso. I pull around 50ml in 27 seconds. The crema would then be on the 50ml mark. My friends like it as espresso/cappuchino. I like it as a cappuchino. This is what counts for me.

I was looking for a video that explains the curved vs flat tamper - that's how I came your video across. When I bought my tamper, I bought one because I needed one without understanding the difference. Tamper = tamper. Your scientific approach tells me it is not worth upgrading to a flat tamper. The difference might be negligible to me. This is my opinion and I happy that you made the video.

oliver Lison that’s a good question. So extraction times are a variable that is being toyed with quite a bit. Traditionally, or on average I’d say extraction times are definitely between 25-30 seconds. But as roasts get lighter, or the popularity of origins, people are toying with the variable of time and how it changes flavor. There is no right or wrong answer, in the end it’s all about what tastes best to you.

If you claim to be "scientific", you really schould discuss your error and error deviation. With only one measurement per tamper there is no reliability in your results. If your statements would prove to be true, it would be lucky and not actually a deduction based on empirical results.
However one can see that you put some effort in you video and I can really appiciate that. If you put some more thoughts and research in your testing, I'm sure you'll create valuable content in the future, I'll be happy to watch.

Alex is very right. The video does not show a difference, just two numbers. If you use the same tamper twice you would get two different numbers as well. To see a difference you need to identify the variability of pulling a shot with the same procedure. This doesn't require more video time but pulling more shots.

Alex on a Bike I appreciate your feedback. In the end though, I’m not curing cancer, I’m playing with coffee. Im happy with the content I created using the time, tools, and knowledge I have available between many other projects. Thanks for checking it out, and thinking about it deeper. In the future if I complete any other testing I’ll include the fact that I did multiples of each and purely edited for time as most people don’t watch videos for more than 2.5-3 minutes.

1 sample is not a TRUTH reflection of the real WORLD RESULT, ie statistically INSIGNIFICANT. Also, can you taste <0.5% difference really?
