Hi I'm from Argentina and a few things:
1) He was asking you for your backpack, I know you might have a guide or something, but you knowing nothing of the language was obviously leaving you at a vulnerable spot. Plus carrying around expensive stuff nonchalantly, and not being properly aware of your surroundings.
2) You got insanely lucky, many times, by getting down of your bike and trying to get away like that, you could have gotten shot. Many robbers here don't give 2 cents about you and your life, and will kill you without thinking about it.
3) Many "superheroes" in the comments mention things of how they would have punched the guy... He could be 5 feet tall, doesn't matter, he will shoot you the second you try to punch him. And they have been on the streets fighting and punching each other for their entire lives... How many fights have you been in?
4) It's a beautiful country with many things to give, and full of good and nice people... but the security and corruption are everywhere, and obviously while not the majority of people are a threat... they exist.... Think of it as Mexico light...

Here in Buenos Aires I am used to see american people walking by as if this place were a safe one. Recommendations from me, a native argentinian:
1) go out there only when stores are open, from 9 a.m to 1 p.m and from 5 p.m. to 9 p.m.
2) try not to approach any slum. It is not a joke.
3) Learn to identify real money to not get fooled at change in cabs.
4) we all know that you are a foreigner even before you start to talk. Try to imitate the way of walking, looking and dressing of us. That decreases the risk of robbery and death.
5) please don't walk by with your bag in your back or your cell phone and wallet in the back pockets of your jeans.
6) stay calm while you are being robbed and do not make something stupid.
7) If you want to be friendly, accept the god damn 'mate' that they are offering you.
8) gun concealed is prohibited but you can carry pepper spray.
9) the robbers always use nike hats and sportive wear. They are used to go on in couple over a motorcycle. One keeps on the motorbike while the other is robbering you.
