It's beautiful watching a master work. He's done it so long he just knows when things are right and on the fly can deal with any issues that he needs to deal with. Everything he does is like a finely practiced dance, everything is done in order. Every step is given enough time to do it's thing (mixing, resting/rising, baking) so that he isn't waiting on anything so he can be absolutely efficient with his time. The whole staff seems to really know what they are doing so they don't even really need to talk to each other very much because they just know how things should be happening and what the others are doing. Amazing! Inspiring! And educational. Done with love by both Master Baker and Videographer. Excellent storytelling. Enjoyed watching the bakery slowly come to life as staff goes about their opening duties.
