These regions are all mor or less flat or with rolling hills. The others are more mountain regions which produce alpine and mountain cheeses which are very different from Emmentaler. ;)

The aged one is so good. Also apropriate for lactose intolerant people like me.
It took me a lot of time to get used to the strong swiss chesses bit it is so worth it. Even if it is expensive.

One of my favorite cheeses. Goes great with nearly everything. You can find some great locally made Swiss cheeses while traveling in Switzerland that aren't Emmentaler but just as good.

In Mexico, we use other traditional methods, such as wrap the cheese in banana tree's leafs (i'm not sure if it's safe or a bad practice). It really interested me. Thank you for be inspired to do this video. Hugs!

@Eu Mim I know I’m a bit late to the punch here, but the Swiss cheese produced by many American companies is still authentic with just as much time to develop. My family came from Switzerland, Swabia, and the Palatinate in 1720 to Pennsylvania. Pennsylvania is still a huge producer of Swiss cheese, I can go buy it from the farmers market in my town. It’s not like we just started making cheese 200 years ago, we’ve been making it just as long as these folks! Ours obviously looks different, and our wheels aren’t as large, but it’s still the same type of cheese. Made by the descendants of the folks that invented it.

As someone whom lives in a "cheese country" I have do admit, it is true. Every producer that has a cheese with a regional protection, thinks his cheese is the best.
Myslef, I love Gorgonzola, Roquefort, Parmesan, Mozzarella, aged Cheddar, Pecorino and greek 100% sheep milk feta. I do not eat Emmentaler, unless it is on a self made pizza, where I use a mix of Emmentaler, Gouda and Mozzarella.

I spent 10 years in Germany, both military and civilian and Emmentaler is common over there. I like it alot better than the traditional Swiss chess you get over here. The flavor is miles better. Makes a great sandwich or just eating by itself. It's my favorite.
