we recorded at a studio that's on a ranch and when you hear the rooster crowing that rooster was actually crowing at that exact time because Tom put a mic outside to record the sounds of the farm while we were in the studio. Then, when mixing, he'd add some of those farmyard sounds here and there.

Judging by his youtube name, yeah, he played the blues harp on this song. He's also somewhat of a blues legend, and he's been putting out albums very consistently since the 60s. He has a wikipedia if you want to check.
