I do mine pretty much the same way. Grew up eating panfish fillets on the northern Mississippi between Wisconsin and neighboring Minnesota.

Good friend of mine taught me how to do it as kids and he said right away, "The secret is cornstarch."

Flavoring you can go in a lot of directions, I actually prefer cocktail sauce and some other cajun dips for my fish.

Best fish here: Blue gills/sunfish (sunfish capital of the world, Lake Onalaska) perch, walleye. Smart people don't touch cats from the Mississippi unless they are smaller due to pollution. Northern Pike are abundant here, but tier 2 in terms of flavor/texture.

I learned in environmental science that 80% of the mercury in that water comes from the air. Since they've found PCBs and PFAs in far cleaner inland areas, you're chancing a lot especially if someone is pregnant or has a health condition.

Hope to get down to the bayou at least once in my life.

I'm originally from Missouri and caught a lot of catfish, white bass, bluegill and bigmouth bass. Been salt water fishing a bunch too, out on the west coast and down Mexico way. The worst day of fishing is always better than the best day in the office. Fried is the way to go with cooking fish, thanks Kent and Shannon for another great recipe. Hot oil and a flour and baking soda coating makes for delicious eating.

Now that was some good looking fish you fixed there Kent. My mouth was watering the whole time you were jabbering and dancing after tasting your catch. Gotta agree with you about the walleye. Went out on Lake Erie many years ago with a friend and caught a good mess. Fileted them and fried them in a turkey deep fryer using only Autry's. Best fish I had ever had. And I used to catch bass and crappie - a lot. I would usually use your double dip method with beer instead of Sprite. Love your channel and love you, man.
