I do mine pretty much the same way. Grew up eating panfish fillets on the northern Mississippi between Wisconsin and neighboring Minnesota.

Good friend of mine taught me how to do it as kids and he said right away, "The secret is cornstarch."

Flavoring you can go in a lot of directions, I actually prefer cocktail sauce and some other cajun dips for my fish.

Best fish here: Blue gills/sunfish (sunfish capital of the world, Lake Onalaska) perch, walleye. Smart people don't touch cats from the Mississippi unless they are smaller due to pollution. Northern Pike are abundant here, but tier 2 in terms of flavor/texture.

I learned in environmental science that 80% of the mercury in that water comes from the air. Since they've found PCBs and PFAs in far cleaner inland areas, you're chancing a lot especially if someone is pregnant or has a health condition.

Hope to get down to the bayou at least once in my life.

I'm originally from Missouri and caught a lot of catfish, white bass, bluegill and bigmouth bass. Been salt water fishing a bunch too, out on the west coast and down Mexico way. The worst day of fishing is always better than the best day in the office. Fried is the way to go with cooking fish, thanks Kent and Shannon for another great recipe. Hot oil and a flour and baking soda coating makes for delicious eating.

Gotta agree with you about the walleye. Went out on Lake Erie many years ago with a friend and caught a good mess. Fileted them and fried them in a turkey deep fryer using only Autry's. Best fish I had ever had. And I used to catch bass and crappie - a lot. I would usually use your double dip method with beer instead of Sprite. Love your channel and love you, man. Great recipe Kent! When I was growing up fresh caught crappie, white bass and lots of catfish was a staple at my house. And the fish fry's? The Best ever! Those men knew how to do it up right. And the waives weren't a slouch either with the wonderful dishes that they made to compliment the entire meal including dessert! Sometimes, try yellow mustard as the wet ingredient. You don't taste the mustard, but it is a great binder for the dry ingredients. Let me know what you think. The guys at work thought I was crazy. Every one of them use mustard. Love your channel. God bless.

I have tried your fried catfish recipe several times. Hmm good. That buttermilk powder seem to be the ticket to great crispy catfish. That is probably the more traditional way. But there are many ways to fry fish.

I literally watched some Andy Griffith this am. 😂
My mom and a friend used to fish for hours sometimes. And then they would go home, clean the fish and then we would all get together and invite some other friends over and enjoy a fish fry, that evening. Good fresh catfish and crunchy hushpuppies. That's been many years ago and my mom has been gone for years, and so has her friend. But those memories are still there.

I make my own tarter sauce and have used this recipe for years, the only other thing I always add is fresh chopped dill, a few dashes of ground cayenne, and some fresh cracked pepper. So many people love it this way when I make it.

Some of the most special memories of growing up were all the times spent at my grandparents cabin on a river up north. I loved relaxing in the boat fishing. The excitement with every new thing Daddy & Grandpa let me do was the best. I always had to bait my sister's hook, she is older but didn't like worms. I was given a spoon & taught to scale the fish and the day I finally got to fillet them...I thought it was heaven on earth! Nothing better than catching, cleaning and cooking your own fish! We're from Michigan but made some great fish! My other grandparents had many acres of woods. Grandma & I went out back for mushrooms and all kinds of berries & took them in to make all sorts of pies and other meals/desserts (freezing any excess). I wasn't able to be there when they hunted or processed their deer but cooked with lots of venison through the years. Thanks for the memories!

Great video!! My favorite frying fish (by far) is flounder, but they don't swim around here so I only get them 1-2 times a year when we venture into saltwater. Local fish are catfish, bass, perch, and crappie. Also croaker in the summer if we venture downriver a bit. All good eating when fried. If you want an interesting and simple twist on tartar, mix some Old Bay seasoning into mayo with a few dashes of hot sauce, and add optional pickles/lemon. Old Bay has a time tested spice balance for seafood and boy does it work well in a sauce. Also makes for an easy breading seasoning if you add it to flour. After all this talk, I need to go fishing...

Boyfriend says that growing up he and his Mother would go to the drainage ditches to fish for catfish late in the night. Her preference for bait was always chicken liver. When I put my catfish in the freezer, I usually soak them in salt water when I freeze them it seems to keep the flesh from getting soft in the freezer. Sometimes that happens when your defroster that’s just my tip that I learned from an old friend.

Hey Kent great video. Never in my wildest dreams would I ever thought about putting capers or nasty horseradish or even the w sauce in tartar sauce. When i was a kid i ate ketchup on everything. My Dad said I grew up when i started eating Tatar sauce. My favorite fish of all fish is mahi-mahi. But living in Hawaii for three years I was eating fish a lot and we ate a lot of mahi-mahi and I love that fish. And as far as realistically goes I think my favorites are walleye and catfish which actually catfishing her so much easier to catch

Walleye would be my favorite cooked just like you just did. Next favorite would be a big sunfish (or crappie), scaled, gutted and fried whole just like that in olive oil, cooled a bit then fresh lemon squeeze and salt. Love your show, keep up the good work and God bless.

Thank you for another wonderful video Mr. Kent, I fixed pan seared cod last night. I used your regular seasoning mix and it was delicious on the fish. The seasoning is a little too salty for me, so I used less and it was still great. I guess I don’t have a favorite fish because, I like quite a few different fish. I only like farmed catfish because, from my experiences, it has always had a nasty muddy water flavor. Plus I don’t go fishing vary often because I scare the fish away before I leave my house. I’ve been invited to go fishing with friends and I don’t even put a fish hook in the water and I guarantee you “nobody” will be able to catch a fish. So I don’t get invited very often. I guess it’s because of my boasting about catching my first fish when I was 7 years old and I was fishing with my older brother and two cousins. I was the youngest and I caught three small rainbows and no one else caught a fish that day. My dad told me to use grasshoppers and that worked.

If you want a super crunchy filet for a fish taco try switching up to a slurry of shore lunch Cajun, followed by a dry panko breading. We make them this way. then serve them on a flour tortilla with a smear of tartar across the tortilla, filet, shredded cheese, all your preferred vegetables and I mean traditional taco toppings, (raw cabbage on fish tacos is not good) and then the smallest stripe possible of kraft Italian dressing... this really brightens up the flavor. ...and a little tapito hot sauce if you want more heat.

Love the blast from the TV past. My late father taught me to fish at an early age; I passed it on to my daughter. She, in turn, taught her children (my grandchildren)! Same with gardening, except it was my maternal grandfather who taught me. Enjoyed the fish fry. I'll have to try that!
We primarily bake our fish (primarily the saltwater variety - I have never lived more than 45 minutes away from salt water), occasionally grilling in summer, along with making fish soup/stew.
When I can, I will prepare halászlé, the spicy Hungarian fish soup (uses HOT Hungarian paprika, one of my go-to spices), in a hanging pot (bogrács) over an open fire outdoors. I can almost smell it as I type this! Thank you again!

I live in Mexico and we fry up Corvina. It's a lot like catfish. I grew up in the country in Georgia with about a 10 acre pond. Caught many of bass, brim, and catfish. I would catch about 30 cats & we would invite a ton of people & have a fish fry. Love me tarter sauce.

Loved the video!! Fried fish is one of my favorite foods! We grew up fishing at the lake catching tons of crappie, bass, trout and even carp. My mom would fry what we caught and it was DELICIOUS. I'm a good cook and even a good baker, but I just cannot fry. I always mess it up, so I end up with food that's not great and a giant mess in the kitchen as an added bonus. 🤪😁

Trout, walleye, and catfish are my top 3 favorite freshwater fish. Sea mullet (whiting, northern kingfish, or whatever you call them) swordfish, tuna, cobia, flounder, tuna and mahi mahi are some of my favorite saltwater fish. They are all good as long as you bleed them! If you’ve never tried bleeding your fish, try it! You can actually see (and taste) the difference in the fillets! With my wife being GLuten Free due to health reasons, I have used things like Tortilla Chips ground up good, Added a little flour she can have (gluten free) and Cornstarch with seasonings like you use pretty much. The Wet Dredge half is Heavy whipping cream, 1 egg and some seasonings like salt, tiny bit of pepper. It is very good for making pork fritters/thin chops, I use only GF Flour for her Chicken Fried Streaks, Deep Fried Chicken and Pork Steaks;/Chops. Darned Celiac apparently isn't some horse manure issue, she is healthier after going GF. But we did find out there is NO HEALTH BENEFIT for people who aren't Gluten Intolerant or Allergic.

Thanks for the ideas on the dredge, I am gonna use it, and I am making them Corn Dodgers like you did in another video! LOL, she wants me to make my seasoned beans with the dodgers.

Great video Mr. Rollins! I love some fried fish. Im going to try this recipe one day. I live in northwest Louisiana and my favorite fish is Bream and cat fish, i also love some Gar fish done right. I know a lot of people from the north dont know what a Bream fish is. I believe they call it a Sun fish.
