I enjoyed the book and I'm an enthusiastic cook. But it soon turns out to have the exact same issues that most books of this kind have. You can make these salads in a flash! Specialist equipment you don't have to have - but you should. If you have the time have the time to shop for special produce - go for it. But triple the time you think you'll need, and find substitutes for some of the ingredients. You really don't need to roast sesame seeds, crush one to a paste, then mix the two different kinds into the same sauce. I made that seriously underwhelming salad - then made the same one the way the Japanese do. Way better, and less than half the time involved. Best of luck with this one. And unless you're a professional chef you don't need five different kinds of vinegar either. They're not all that different.
