I would still be totally down for you doing a documentary traveling around with Wayne Curtis when this nonsense is over and you're sort of the less knowledgeable person asking him questions. Something in the format of the you would quote his book and then say have you discovered anything else since then is there something that is on the island now you would like to go try and then you to get drunk and talk rum together. A couple of days to clear your hangover and the documentary jumps ahead to the next place. rinse and repeat until you've covered the entire Caribbean South America and Indonesia. 3-hour documentaries do really well on DVD and I would be totally down for it.

@DrunknHick You.. To try new things. Broaden your horizons. Not everything is going to resonate with your palate right away. Hell, that isn't even the case with a lot of cocktails, as some of them literally don't taste alcoholic.

I was responding to you saying that drinking was an expensive hobby for an acquired taste, and that you literally don't have to go spend hundreds of dollars on shakers, spirits and mixers.

Drinks and cocktails come in so many different varieties and flavors and alcohol contents that just lumping them all together and passing them all off is kinda silly.

One protip I haven't seen listed here: people aren't conscious of this fact, but when they eat they often exhale through their sinuses with the food/drink in their mouth in order to help move volatiles into their sinuses. Perfectly valid-- necessary, really-- but needs modification for hard liquor. See, that experience you're describing is VERY characteristic of someone who is doing that exhale as intensely as you would with your average food (I say this as someone who used to do that also and thought I hated alcohol early on, I know of what I speak). And that's natural! In every other situation that just makes the flavor easier to fully appreciate.

Buuuut alcohol isn't like that. The ethanol itself is very volatile, many of the flavor compounds are likewise very volatile, and even a gentle breath is going to pass enough to appreciate the taste. Exhale really hard and you saturate every receptor and, especially, blow concentrated ethanol vapor up your nose, which, well, hurts, and isn't pleasant. My biggest advice if you're starting out appreciating hard liquor is take a breath, take a small sip, hold it in your mouth (a bit like you would with cigar smoke-- slack your jaw and keep your tongue flush with the floor of your mouth), and exhale G E N T L Y and gradually. Once the saliva in your mouth starts to dull the flavor a touch (a bit before ideally, but hard to know when that is without a little experience), then swallow the liquor and exhale again.

Of course, as other people point out, if you experiment with it long enough you'll eventually work out something that works for you. And hey, maybe other people here have evolved other ways of appreciating alcohol. But my experience is that this an understandable system newbies who tell me they hate alcohol have been able to employ and get right in a couple of tries.

You just have to start slow. I became obsessed with whiskey because I decided to try it on the rocks one day. I loved it but it soon became boring so I started drinking 80 proof (lowest legal proof for whiskey) scotch neat. Now I'm able to sip and enjoy 130 proof bourbon neat. Neat is the only way i drink whiskey now unless I'm adding just a few drops of water to bring out differen flavors. This isn't something you can just jump into and expect to enjoy.

My second viewing of this. First time was before I owned any rums aside from an old bottle of Bacardi's that stuck around in the back of a closet. This helped me add to the collection. Second viewing I tasted along with (some) of the rums. Learning a lot.

This has reminded me of trying Old Monk rum in Calcutta more than 25 years ago. I forget what the age statement was but we thought it was probably a couple of weeks to develop the caramelised quality that it had. I could drink it on its own but I tended to add it to young coconut juice (made available by the guy with the machete on the street) and for a communal drink it went very well with mango juice.
My local quality drinks emporium has several of the rums you tried on its shelves so I may become a little more adventurous and try something other than Pussers and Woods.

4:33 I'd like to point out that aqua vitae and aqua regia are wildly different substances.

The first was basically a wine distillate with a high alcohol concentration, while the second was a mixture of nitric and hydrochloric acids and was a powerful solvent able to dissolve metals like platinum and gold.

It was dubbed the "regal water" because it was one of the few substances capable of of dissolving noble metals.

A) Rum wasn't stored in barrels.
B) Rum was primarily used for keeping water clean, and not straight drinking. Yeah some MIGHT have decided to go nuts and party with it, but alcohol back then was primarily a way to sterilize water. Not saying people didn't drink cocktails and punches.
C) Pirates we're thieves and killers, but most of them were not stupid, since if they were they didn't last long. Brutality ≠ lack of intelligence. They wouldn't have hall partied at the same time at the very least.

@BigBossTussBall Limes can help with scurvy, anything with vitamin C can. The issue is that they switched from using lemons to limes while keeping the same proportions. Lemons have roughly twice as much vitamin C in them. Limes were cheaper, but less effective though they did help better than nothing.

That said I don't have the money to buy a rum that I'd actually wanna drink, so it'll be a while before I make it.

@Josse Brodeur The British Royal Navy disagrees with that statement, seeing as they are the ones that invented the naval rum tradition and grog, and it seemed to work to keep scurvy away.

If you have the opportunity to mix some of your own grog I recommend it, it's actually quite nice.

My grandmother has an old Brown Rum called Ron Vicaro Superior. It’s great, but I can’t even find it online anymore to order more. So I pretty much never use it for cocktails. It just sits and looks nice

Just discovered this great episode. I immediately thought you may find it fun to try some of the rums made by the Fair Game Beverage Co. in Pittsboro, NC. They make an agricole rum from South Carolina sugar cane as well as their own "No-lasses" rum made from sorghum rather than sugar cane. They grow their own sorghum for a distinctly southern take on a traditional rum. Their Amber rum is also quite good, made from panela sugar (an organic product from evaporated sugar cane) from Columbia. I have no connection to them, just a local fan of their rums. (as well as their apple brandy, which is sooo good). It's a small distillery, but if you're ever in NC, or know someone passing through, have them pick you up a few bottles at the local North Carolina ABC store.

My wife and I were in Jamaica a few years back and some of the locals recommended that Ray and Nephew overproof rum... Sooo, we bought a couple bottles to bring home. You must have a totally different pallet. That stuff is undrinkable lighter fluid! We gave it all to our son (late 20's then) and even he (nor his friends) could drink it. More power to ya! Keep up the videos... Very enjoyable.

I had a chance to go to the Cruzan run distillery in St. Croix one year. The tour is absolutely fantastic, the staff was readily able to answer my nerdy questions (and some questions from the non-nerds who showed up plastered), and I was able to try several drinks and rums after the tour (including the aged and flavored rums). I can't recommend the tour enough!

I have to correct you on something, Black Rum isn't "Artificially" colored the color comes from the Dunder that was added to the rum post distillation, that is also where the sweetness comes from. Dunder is what is leftover in the boiler after distillation. It is added to Dark Rum to give its color and sweetness, and in to new batchs of Rum pre-fermentation to give the Rum more character and Funk.

Great to see this video on Youtube. I collect Rums from across the Caribbean. A couple notes though. It was a bit hard to compare the Appleton 12 to the El Dorado 8. A better comparison, imo, would have been with the El Dorado 15. (I find the El Dorado 12 to be a bit too sweet). I agree with your take on the Angostura (I am from Trinidad & Tobago). I could never quite put my finger on the after taste until you called out pepper. Some that you should definitely try (although politics might get in the way). The Havana Club Seleccion de Maestros. The Santiago de Cuba 11 OR 12. (From Cuba, obviously) . The Diplomatico Reserva Exclusiva (from Venezuela). Along with the El Dorado 15, those are my 3 (4) favorites. For a smooth, tasty, and inexpensive White Rum, try the Black Cat from Suriname. Sorry that I have so much to say, but it was genuinely great to see someone touch on a passion of mine.

@Ready Set Rum! Doorly's 12 and all of the other foursquare products are excellent. I prefer Doorly's even over the foursquare exceptional cask series because I find those very overpriced. But my favorite foursquare product is Alleyne Arthur's special Barbados rum. $12 at total wine which makes it the best value in rum in my opinion.

The green color mentioned might be dependent on the glass. Glass traditionally has a bit of iron content which is responsible for the green color, which is readily apparent if you look at the edge of the glass. A lot of modern glass has extra manufacturing steps to reduce iron content, thus making a clearer end product.

Love Goslings, it is aged in bourbon barrels and heavy on molasses but makes great cocktails and is probably the best black rum. The char from the bourbon barrels really comes out as opposed to most other black rums which are either very medicinal in a bad way or are very weak.

If you want to explore that idea further, look into the world of tequila. Incredible flavors imo, a very good first start is Olmeca Altos Reposado. First either mix it with bubbly water and lime (Ranch Water), or even better, have it with a grapefruit soda and a dash of salt (San Pellegrino Pompelmo is best, I dont even like grapefruit but it's amazing this way). And try it neat as well. Respect the agave!

Ugrasrava actually alcohol lowers the heat tolerance or your vr1 receptors below your body temperature, which causes them to think your bodily temperature is burning and send pain signals to your brain. That is why cold water relieves the burning feeling, lukewarm water would hydrate you just as much, but you need to lower the temperature. Eventually your brain learns to readjust, which is why Greg isn't downing ice water after drinking spirits neat.

That burn isn't your body rejecting alcohol, it's the alcohol sucking water out of the cells in your mouth and throat. Alcohol is hygroscopic, it strongly attracts water, and our nerves perceive that rapid dehydration as a burning feeling.

Just picked up some of the Smith & Cross today. This stuff is... well, after drinking a lot of different liquor, including some of the classic campfire Islays and a decent spread of pungent Mezcals, I can still say I think this is the most mouth-punching flavor-rich liquor I've had. It's bloody good and really fascinating stuff, but it absolutely demands your attention.

Also how is it so thick at that high of a proof?

I have a buddy who wanted to try some, but handles liquor poorly in his throat, so I gave it a shot with what I have atm and made a Rum & Tonic with Fever Tree's Angostura Tonic. Honestly, pretty solid stuff, and the flavor is far from lost. Don't know if I'm going to make it an everyday drink, but with a lime wheel and a little spritz of lime juice it's super drinkable while still preserving a lot of its character.

Then after seeing this wonderfully informative video, I now regularly stock my new bar with Plantation 3 star, Plantation 5 year, and Smith + Cross and make all kinds of cocktails. I got into runs after going to Jamaica and Panama. Coming from Wisconsin and drinking the usual garbage rums, I was surprised with how much different flavors they have. It was like going from Jose to Patron. I really loved the Charley’s J.B. Ovenproof. I liked it even more than the pricey Appleton Estates offerings. And Ron Abuelo and I became real good friends in Panama. Great episode. He also did one on grog. I am very curious about that since I am a history nerd.

Having been involved in more than my share of araq consumption in Israel, araq is distilled from fermented date mash. It is flavored with anis, and typically, you drink it over ice with water added. The water gives it a milky cast. And you drink it by the shot. Some might find it similar to ouzo. In the Levant you can find it under several related names such as raki and araki.

As an anthropology major focusing in archaeology and history minor I greatly appreciate the history. Chinese distilling is interesting especially regarding rice, from what I can gather it wasn’t as in favor as say plum wine. Because well plum wine is really good lol and let me say as someone who has been on an archaeology dig in the Middle East, arak is good. We drink a lot when I was in Israel for a month. Vodka, Gin and Arak was all very popular to have.

On this matter of history, it surprises me a little (maybe you were conscious of time) that no mention was made of the Great Boston Molasses Flood which killed 21 people in 1919. I understand that the tank which ruptured was over filled with molasses because the timely sale to Jamaican run makers was hastened due to imminent Prohibition. What do you know?

i love love love Goslings 151 in my zombies and now it makes sense why, probably cause its sweet lol!
Also the Wray and Nephew isnt really a 151 rum because its only 63% alcohol as compared with 75.5% on 151 rums :)

Thanks to a comment on another one of Greg's videos I ordered a bottle of Plantation Stiggins pineapple rum. His tasting of this other bottle of their stuff makes me both really excited for my bottle to arrive AND makes me want to try their other stuff. The only rum I've had to date is Black Kraken and apparently that wasn't the best rum to start with, I guess. I enjoyed it, though.

Not going to lie, I just turned 21 two days ago, but I started watching a while ago. I went to the liquor section and saw spiced rum and immediately remembered this video and the other one saying no spiced rum. Got me a nice bottle of Plantation 5 year, and was very happy with it!

I remember hearing that artificially aged alcohols are getting better over the years because they're cheaper and employ armies of chemists to make them taste better all the time while aged traditional alcohols stay about the same, which is where the oversimplified rumor that wine experts can't tell the difference between boxed wine and $200/bottle wine.

This video is the best argument for Smell-O-Vision that I've ever seen. Respect for the scholarship behind this one: the history you're introducing is in many ways part of the "firmware" of our culture, for better and for worse. I've tried and enjoyed spirits from many parts of the world, but I keep coming back to rum because....well because it's rum, dang it! Cheers!

My brother-in-law, a scotch drinker, insists he knows rum well enough to label my favorite rum as "spiced rum" but it just isn't. I don't know enough about rum to be an expert but I know my own favorite. Rum is considered by many to an obvious or simple spirit whereas whiskey is complex and interesting. These people are called idiots.

Love your vids, and am glad you are not a bartender that usually are extremely strict and some absurd with the requisites. Regarding rum, one of my favorites since I am born, raised and currently a resident of the Caribbean, I would have also liked to see Spanish colonies Rum, which are my favorite, Cuba with Havana Club, DR with Barcelo, Brugal, ec.. and PR with Don Q, Barrilito, Caliche, etc.. I also like the French you mentioned, British are somehow to sweet.

Most spiced rum is referred to as a gold(en) rum. Dark rum is matured in a heavy toast barrel, gold rum on either raw oak or slighty toasted. Inferior rums have colourings added.

I recently turned 20 (legal age of getting your own strong alcohol in sweden) and until now ive never found any alcoholic beverage (or drink) that ive ever liked. Ive seriously prefered any vodka over any beer, wine or champagne or whatever. Until a couple of friends and I went tenting at a friends place. My friends parents offered a taste of a rum they (the parents) hadnt tried before. I said fuck it why not, some day ill find something I enjoy. It was Bumbu. Straight Bumbu rum. Nothing mixed in at all, body temperature. And now, I have something to drink whenever we go out.
This was an awesome video and Ioved every bit of it!

Depends on your purpose. If you want to make a lot of drinks, you might want to get an overproof, a dark and a light, but if you want representatives from a lot of categories, you might want something from the Spanish, English and French traditions, like a Cuban light rum, a funky Jamaican and a French agricole.

I can’t remember the brand (unfortunately),but I ran into a bottle that was so dark, sweet, and delicious I ended up drinking the whole bottle (not a usual habit for me). I woke up on the floor cradling the bottle the next day. I never found the brand again, probably for the best, heh heh heh.

Because of the laws of my state, I can drink at 18(my dad lets me), my favorite thing to do with rum is to mix it with iced tea, especially spiced rum, the sweetness cuts the spice and makes a pretty decent flavor

28:00 Metallic taste: If there is only one destillation process in the production (or two) and you don't store the spirit in casks it will have metallic notes. You can tell by testing new make or cheap whisk(e)y that was stored for three years and a day. It will be different if you use a column still, but they are used for cheap industrial spirit anyway.

The black rum is indeed black because of added coloring. But not necessarily to simulate age. The addition of molasses to color a rum can really add a dimension, especially in certain cocktails.

My understanding of "black rum" was that it was rum mixed with molasses, not to simulate age, but to just make it sweeter. Or to simulate badly distilled rums.

I know you said you find it a waste for spiced rum but have you tried Kraken or Sailor Jerry's it's a fantastic spiced rum that's incredibly smooth and sweet sitting at 94 and 92 proof kraken being a black spiced rum so it's incredibly dark, and I find it pairing with mountain dew the best with is lime kinda flavor

Aside from the Plantation, you didn't go through any of the rums I normally keep around. I, for one, would like to see more of a cocktail guide - "I would use X rum in Y cocktail and this is why" kind of thing, because that's what I like, and rum is the one spirit I just can't quite nail down(the liquor taxes here make bringing four different bottles home for experimentation out of my reach). I'm going to have to check out that book.
