I'm Southeast Asian and I never knew it had poison. In our grocery stores, the bamboo shoots available are those that are cleaned and chopped already while in my hometown, a rural place, my relatives or others prepare it so I had no idea and have not even heard about poison or toxicity.

Edit: I googled and bamboo shoots contain toxic amounts of the cyanide taxiphyllin which will not kill you but will make you uncomfortable or ill, just like cassava. Correct preparation lessens the amount of taxiphyllin and makes it safe to consume.

We eat bamboo sashimi in Japan. We just slice them up, put some soy sauce (with wasabi) and eat. Or we chop them, cook with rice and soy sauce. Or we make veggie stew with soy sauce. In Indonesia, we have plenty food using bamboo shoot as main ingredients. One of my favorite is Lumpia Semarang, it's basically similiar to risoles but the filling is bamboo shoot with extra filling like egg, chicken or some veggies. Dressing with special traditional sauce as well. One of the most favorite snack here. You should try it as well whenever you get the chance.

Bambooshoot consists a huge part of our diet, we eat them fresh, fermented and dried. They're all delicious equally, but my personal favourite is fermented bambooshot with pork and fresh bamboo shot with drukha soft cheese 😋. I could eat them everyday of my life 😅

the 'poison' in reference is calcium oxalate. you can also find it in a variety of nuts, legumes, beans, pumpkins, leafy greens, potatoes, sweet potatoes, and many many other plants. unless you are eating them raw then you will be okay. the chemical manifests as tiny little crystals that dont react well to heat. even still, the effects of calcium oxalate is fairly mild to ADULT humans (dosage and amount eating varying) so eating fist fulls of raw spinach wont do you damage but might make the inside of your mouth feel a lil fuzzy (that being said, a very common houseplant, the dieffenbachia sp., was used as a torture device during the transatlantic slave trade due to its high calcium oxalate content). that being said, if its edible its safe to eat with prep, but if its non-edible stay away.

South East Asian here! Bamboo shoots are one of my most favourite food! I love it in however way it is cooked or fried. Pickled bamboo shoots are such a delight too. I also love to just boil them plainly and eat it as a side dish. In fact my dinner today was pickled bamboo shoot and pork soup lol.

Yeah! That's what we Northeastern Indian also eat ' the Bamboo shoot' we also make pickles with it. We add dry fishes, garlics, onion, chillies nd to make it even tastier we add dry jackfruit seeds too. This is very popular in Tripura.

Bamboo shoots is a very traditional dish in the North east India and all the states have their variation. From my state Tripura we have a dish made from it called "Muya Chakwi" and it's one of my favourite.
