Awesome video! It's really accurate! **There could have been some details describing how the shape of the fat determines it's phase; solid or liquid. Since saturated fats have no double bonds (thus no "kinks"), they can pack their fatty acid tails on top of each other more neatly and thus most of them are solids at room temp. However, the double bonds in unsaturated fats make "kinks" which interfere with the packing of fatty acid tails, thus most unsaturated fats are liquid at room temp.

thank you for this video. Although I knew that trans fat was bad for you and most unsaturated fat was bad for you this still told me in depth of why this is the case. Just remember guys, it's not the amount of fat, but the type of fat which determines if it is good for you or not.

Great video. Except, there is no evidence for saturated fats being unhealthy and a growing set of evidence for vegetable seed oils (unsaturated) being unhealthy. Olive oil is still healthy though, unless you heat it up. Vegetable fruit oils in other words are OK. Seed oils like canola oil and soy beans oil is bad.

There is an overwhelming body of evidence that fails to establish that saturated fatty acids are bad for us. On the other hand, polyunsaturated fatty acids are prone to oxidation, and oxidized molecules inside your body can trigger many different kinds of chronic disease. Trans-fats are especially prone to oxidation, which is why they are appropriately labelled as 'bad' but in fact no polyunsaturated fats are immune to oxidation. Any polyunsaturated oils will oxidise over time, and cooking them, particularly at high temperatures, will intensify oxidation.

The simplest way I've heard it explained is this: Blood clots generally form when bad cholesterol and saturated fats get together in the blood vessel walls. Trans fats don't need cholesterol to stick, and they bond to saturated fats.

Good video, but Part II should include what the trans and saturated fats do in the body, as opposed to cis-unsaturated fats. It will be helpful to also explain how short and long chain fatty acids are used.

Here's a basic rule to follow, if it's solid at room temperature it's gonna be solid in you, if it's liquid at room temp it's gonna be liquid in you. The one exception is coconut oil, which is solid at room temp, but put a dab in your hand and see what happens, it will melt. But having said that, stay away from GMO vegetable oil: soybean oil, canola oil, corn oil. And get cold pressed/expeller pressed oils such as: olive oil, coconut oil, nut oils etc.

Fat is still very energy dense (contains approx. 9kcal/g) and saturated, trans and unsaturated fats all have the same amount of kcal in per gram. So yes you need to make sure you're eating the right fats but also in the right quantities!

Naturally occurring unsaturated fats are always cis. The trans fat looks like a perfect competitive inhibitor. That is, it looks like a poison. The trans configuration is the less constrained so that if the molecule is upset, (heating, or even during the hydrogenation ) the molecule might flip to the trans as this is the energetically more stable.
The unsaturated fatty acid molecules are more energetic. That is, they are somewhat thermodynamically unstable. Manufacturers of processed food like to use partially hydrogenated fat because it is more stable and more predictable in its behavior.
