Is there any concern about oxygenating the beer when you reattach an empty jar and open the butterfly valve? In my head it seems like air would pull in through the top as the wort/beer drops into the jar, and maybe some air travels up through the beer from the empty jar?

C02 is heavier than air, so it (the air) will immediately rise though the wort, and through the c02 gas layer on the top and get purged in by bubbler. Yes, you will introduce oxygen, but it won't last more than maybe an hour or so before it all gets pushed out by the heavier CO2 (assuming you have a yeast reaction active in the fermenter)

If you do this when theres a little yeast left the oxygen will get purged with the last few days of fermentation

When capturing the yeast from the catalyst, is that for beer only or can you do the same for wine making? Respectfully submitted.

When dry hopping is it best to wait until fermentation is complete? or during fermenation? and for how many days do you leave the hops in the fermentor?

Does the system work the same for wine yeast as it is caught for beer? Can the wine yeast be reused as a yeast starter for wine?

I've never dumped the first trub... I poured the wort, added the yeast, attached the blow over hose and it's been sitting for 8 days so far.

If I dump the trub now, I'll lose some if the fallen yeast... does this matter?

Or should I just wait away this point and dump it all on day 14?

You should wait about 8-10 days for the initial trub dump, this will give your trub time to settle out and compact in the jar. Anything collected after this dump should be clean yeast suitable for repitching in your next batch. Cheers!
