Nonono, you dont need crema to make it good. The best espressos i've had are from light roasted specialty coffees pulled to long ratios. They had the tiniest amount of crema but they tasted heavenly. Also <2weeks from roast is challenging since u have to modify your recipe as the beans rest.

I would like to see some blind taste tests to see if all the steps actually change the flavor at all. Seems like nerds just over nerding sometimes when it comes to espresso. Thats cool and all I do that too, I'm genuinely curious.

For coffee "Nerds" A over extraction ( > 28 sec) will taste way more bitter and a underextraction (< 22 sec) will taste too sour. When using around 19 grams of coffe beans to get around 38 grams of coffee.

My crema is thick and my coffee taste just fine, but when I'm pulling the shot it's not syrupy like yours. It's slightly more watery. I've had a handful of time where the shot pulls perfectly, like honey. But I don't know what I did. 😢😢 any suggestions?

The video does not answer the question posed at the start. These are steps you can take to make good espresso consistently, not ways you can tell if your espresso is good. Only way to know if it's good is to taste it.

I've been in specialty coffee for 4 years and the guiding principle for knowing how anything turned out is that you must taste it. I've had 45 second shots that were delicious, and 19 second shots that were delicious. I've also had 25 second shots that are disgusting, quite often actually. Time is nothing but a result to be observed and a reference point we can look back on to make adjustments. Time does not give an objective reading of extraction level, it can only give us clues to how the extraction and taste MIGHT be. In the case of this coffee, neither of us have any indication of what dose, yield, time, pressure, origin, processing, or water the barista was using. None of the coffee info was displayed, and none of the final time and yield results were displayed, and even if they were there is no objective way to truly know whether the shot is good or bad without tasting it. Additionally I'd like to add that coarsely ground coffee will produce shots that are too quick, not too slow as you've stated, coffee is actually quite difficult to understand and even basic coffee knowledge can be hard for many to grasp to, as your misinformation has displayed.

I say all this because its comments like yours that discourage others in the coffee community and spread false information which makes enjoying coffee and creating a positive community more difficult for others especially those who are new to it.

@ANDY NORtON Sorry English isnt my first language and mixed up course and fine. I mean to say that I thought that in this clip his grind was too fine. And thanks for your explanation! I actually didnt know this. I'm still learning all about coffee and it was probally wrong from me to assume that what was thought to me up until this point was fact. But that there is way more to it. My understanding was that for an espresso you would normally want a 1:2 ground coffee to water ratio. With and extraction time of around 25sec. I didnt know that that could change. Thanks for informing me! And sorry if i gave the feeling that I could discourage people into thr wonderfull world of coffee. I thought that what thos guy was doing was teaching people the wrong stuff and I wanted to aknowledge that part. Again thanks for taking your time to inform me :)

Generally a 1:2 25-30s shot is recommended for people starting off at home because in that range is where you'll usually be close to a good extraction with many coffee's, especially espresso blends that roasters provide.
At home, I usually stick to a 1:2 or 1:2.5 ratio with all my coffee's. I've had coffee's be well extracted at as little as 22s and as high as 36s with 6 or 9bars of pressure.
If you need any educational content I highly recommend Lance Hedrick's YouTube channel, since in my opinion he is very thorough in his explanations and keeps a good clear balance of objective data, speculation and opinion. After all, specialty coffee is a new and very under-researched thing.
Beyond him, James Hoffmann, Clive Coffee, Seven Miles Coffee and Coffee with April are some people who I also think do a great job of objectively explaining coffee as well!
