I made this!!! The Turkish way of course ❤️
So delicious!! Thank you for a recipe to make this at home.
I made a mild tzatziki sauce with lots of mint in it and the mint went so well with the super rich taste of the meat.
Even though it was a little hard to find, sumac is a must! (I found it at my local Middle Eastern Mart). I’ve never used it before and it adds such and interesting and beautiful flavor.
I didn’t make the bread, but found Lavash bread at my local grocery store and it was perfect.
The butter is a must for cooking the meat do give it the richness. Oh, and when you take the meat out of the freezer, let it sit for 15 minutes before you try and slice it. So much easier that way.

Again, thank you for a fun and delicious recipe. During these times when we’re staying close to home, not only are your videos a joy to watch, but your recipes are giving us something to really look forward to!

Greg W In germany there is that huge misconception that Kebab specifically means döner in a bread....
Germans were the first to make easy takeaway döner in bread. Those germans called it just Döner Kebab. Which confuses many people into thinking that the original turkish one is not called kebab....

Yes to Burak’s bread, please! And yes to Burak in general. (Such a cutie!) I’ve had döner in Turkey and Germany, gyros in Greece, and variations of both in the USA, but the döners in Turkey are the best by far. Love your channel!

The word "shawarma" comes from the Turkish "çevirme" (noun) which defines the action of the verb "çevirmek" (to cause something to spin/turn). The word "döner" is basically the Turkish verb "dön-mek" (to turn) in Turkish broad (or aorist) tense, which can be translated into English as "turning". Both words are Turkish, the only difference between the two verbs is, "çevirmek" implies turning something manually, while "dönmek" does not. In terms of Turkish cooking, "çevirme" implies rotisserie of a whole animal (e.g. kuzu çevirme), rather than layered slices of meat on top of each other as in "döner kebap".

In Turkey "çevirme" is more often used for cooking on a horizontal skewer (like kuzu çevirme, tavuk çevirme etc). Döner is specifically cooked vertically. I think somewhere in time in Middle East they took the name "çevirme" and started imitating "döner"

Having eaten Gyro dozens of times in the US, I can clearly say that it is no comparison to Turkish Döner. Though both make you feel full but in terms of taste and quality of ingredients, Turkish Döner is in the next level.

I definitely prefer the Turkish way. I lived in Turkey 1988-1990 and then I lived in Germany for many years. I retired in Belgium and there's just no comparison. Turkish way is the best. Afietosun....(pretty sure I spelled that wrong).

@Lazorr Seagull i think what you're describing is a different dish from doner / shawarma. it sounds more like lebanese / levantine style than turkish given the garlic mayo and pita bread. (we get something similar here in the US, personally i really like it. i like doner / shawarma too. all the kebabs! :-))

@Sahar Nouri Did they put the meat and sauce in the bread? In the uk they never put it in bread. They put lamb or chicken in one polystyrene container, salad in another container, they give you a pot of garlic mayo, a pot of hot sauce and a slice of pitta bread for mopping the sauces off the container afterwards. This is eaten with a plastic fork. Both the Turkish way and Turkish-German way in this video look really tasty and similar enough to each other compared to the Turkish-British way.

@Something’bout Money smels like Love I'm sure "german way" means the way Turks in Germany make kebabs, not Boris Becker trying to copy it. Kadir Nurman was from Turkey but reinvented the kebab in Berlin in the 70s.

In the UK, there are many kebab shops, but it's completely different. You get lamb or chicken, never beef in a polystyrene container, salad in a separate container and a separate small piece of pitta for mopping up the sauces from the empty containers after eating the meat. There's never a yogurt sauce, only a garlic mayo. It has no flavour in comparison and it costs £7-8.

Completely different product and people in the UK know it as afterpub food (a thing you can only enjoy if you're drunk), while the ones in Germany are so tasty, you can have them at any time of day.

If calling the way Turks in Germany do it "german" makes you think I think it's made by germans, what should I call it instead? "Turkish kebabs like how Turks make it in Germany" takes too long to say lol.

I've been to Istanbul twice. The first trip, I stayed at a nice hotel, and went to explore the streets and I tried doner for the first time. And that was all I wanted to have for breakfast, lunch and dinner!! My husband was like "Seriously? @Fiona McIntosh i see no reason why you couldn't use lamb instead of beef. you might want to lessen the amount of butter in the pan since lamb is usually fattier than beef. for milk you could just sub in water. or if you have the yogurt, mix some yogurt and water together until it's the consistency of milk and use that.

I love the technique of freezing the meat to slice it, then cooking it in the pan. Great home friendly way of cooking it without using a spit.

Oooh i am so glad I have seen your video with the freezing method! I make doner (or gyros) all the time but I bake the whole loaf initially. After it's cooled down I slice it as thin as I can but can never get them thin like yours. Then I have to reheat the slices again. I am definitely using your method from now on!

You saved me in so many ways. I have always loved a real good Döner Kebab back in Germany. Then, I moved to Mexico and have lived here ever since. My husband stumbled over one of your videos (because he is a fan of Alex, the french guy) So, he showed me this video and the next day you had me in my kitchen preparing the minced meat. What can I say? The outcome was like angels singing over my shoulder. Just made another batch and keeping it in the freezer for whenever I need a good Doner Kebab. THANK YOU Refika! Just thought of something as you were explaining how to prepare/slice the meat: what if, instead of freezing the whole loaf, we used baking paper and a rolling pin to make very thin layers of meat prior to freezing? The resulting baking paper/meat "sandwiches" could be stacked (and even rolled?) so that they do not take so much place in the freezer. Then, when ready to cook, it could be very easy to take the paper off and cut those frozen "meat sheets" in slices/pieces of the required size. I think it would probably by less hassle (and probably quicker and safer) than knife cutting the frozen loaf (it's hard, even with a very sharp knife). Also, we could just very easily take the exact quantity of frozen meat out of the freezer, which could be safer (especially if the kitchen is really hot - ie. in summer - and the meat loaf tends to melt as you're cutting it).

I've made this recipe many times this summer! I put the mince mix on sticks and freeze them on parchment paper. Then when its suppertime, I just pull out as many sticks as the family will eat and fry or grill them. Delicious and easy weeknight food!

Refikaaaaa, i did it, when i started to cook, my Swiss-Turkish kids went "oh the smell is amazing". We had a great dinner during Corona stay home days. Thank you. Keep cooking and show us the way.
