I work retail. This is depressing for us workers, especially the bosses, but personally satisfying to make a customer happy. @Jakob Raahauge see the funny part is most Americans in general don't like cheese that has that cheese smell. American cheddar, pepper jack, Swiss, etc cheeses are very very mild intentionally. If you made the expensive board many people wouldn't eat it. American taste for cheese is very different then Europeans. Also summer sausage is legit, many good local farmers around country make variations of summer sausage and many people like it way more then salami. The third note is grapes seem out of place in general, I think apples are better idea. The truth is I think good cheap crackers like triscuits are pretty delicious. The only thing I see worth going high price is olives. Thankfully you can get great olives in USA as surprising as that might sound. I think standard American cheese, some packs of good crackers, some apples and some local summer sausage /smoked meats beats the hell out of that "expensive board". American style Colby jack/Swiss/pepper jack + some good smoked meats maybe an olive caper or apple and you got some good stuff. I traveled all through Europe and I think some Europeans over estimate the value of certain foods while underestimate simplicity's, sometimes simple food might combine in ways more surpring then you realize. Everything good doesn't have to be complicated, less can be more as well. I have seen countless times where an over complicated recipe can ruin the whole deal. After eating both modern American cheese vs old school european cheese I really prefer the more accessible American cheeses. I like the fact that the food smells good and tastes good, I can't get passed eating stuff that smells horrible definitely not for me.

I know there are local tastes - I'm from Denmark and our beloved fermented fish and salty liquorices are not very popular among people from abroad - the liquorice is a great souvenir, try giving them to your friends when you come home! Usually quite amusing.

Everybody's taste should be respected and of course taste is also an acquired thing - so trying new things is always a good idea. Thanks for the comprehensive reply - I hope you will have a wonderful time in the new year!

as someone from europe, these food prices blew my mind. i did not know that you had to pay that much for cheese or salami in the us, nevermind 13 dollars for grapes!!! i clutched my heart when i saw that lmao

edit because some people really must think i'm stupid:
1. no i don't think all grapes in the us are 13 dollars, however i study anglistics & american studies and know that food prices are considerably higher in the us compared to where i am from (germany)
2. no it has absolutely nothing to do with currency, 130 dollars are about 100 euros
3. these prices still blow my mind even though i am aware of them probably coming from specialty stores and not from walmart or krogers. i could have all of that for like half at my local italian specialty & delicacy shop. also the cheap board is still expensive so my point still stands. you could have the cheap board for about 15 euros or less (~18 dollars) here in europe.

To improve the cream cheese, you can mold it into a circle and after you place it on the board...pour pesto over the top. Or, later the pesto and cream cheese in a dish .

I also recommend hitting up Dollar Tree before you hit the main grocery store! They have some surprisingly decent artisanal crackers and pistachios for cheap! And personally I always use Oh Snap Sweet Pickles that are in the refrigerated aisle for part of my vinegary selection. Always so GOOD

I do have the luxury of being within cycling distance of cheese makers/mongers where I live and since I’m not a fan of the stronger cheeses, very happy with the cheeses and varieties they have.

They have a lot of younger cheeses with different herbs and spices, which we usually get some pieces of for special occasion or sometimes a nice snack. (It’s great to get your cheese sliced freshly in front of you and even be able to taste a little bit if your hesitant with a new one 😁

I used to make "dips" out of cream cheese. like split it into 3rds and make one a roasted garlic cream cheese, one be herb and oil and the last one do a spin on a goat cheese tomato dip. Always fun to mix and match flavors and add different crackers/breads to those :)

Grew up in the US, there was a good cheese shop near my first job, so I developed a taste for better cheeses.
Moved to Korea in the 90's, where the best cheese available was Velveta from the black market.

You could do your own creme cheese and use your own blend of herbs, and you could use pears and or dates. And you can make cheap ham taste fancy by buying ham over the counter then dry it (I have a food and mushroom drying rack) at home but any where its about 30-40˚C lay it thinly on a plate covered in ovenpaper for a few hours.

One of my favorite party apps is to pour a raspberry chipotle sauce over a cube of cream cheese. It's really good with crackers, and I never have leftovers. Kroger used to have a great premade sauce (not sure if they still sell it), but its really easy to make by hand too.

Awesome! I do a lot of dehydrating so am thinking last falls, candied dehydrated quince slices would be good to add to a cheaper plate. Also I like some sugar in my red onion pickle. It balances the harsh acidity of the white vinegar. Otherwise I might use rice vinegar which is milder with no sugar. Fermented honey would be great as well. It's naturally sweet and sour.

This episode made the highlight of our very teeny quarantine bubble Christmas yesterday, specifically thanks to the cream cheese and pepper gastrique! Oh my god it's HEAVENLY! Nearly gassed myself out of our very tiny apartment kitchen making the syrup with all that boiling vinegar but it was worth every cough lol. Hell I think I ate half the brick myself!

I removed the seeds and pith of the peppers for mine, because my mother-in-law is cartoonishly sensitive to heat (black pepper is too spicy for her) and even she ate the gastrique, since it just had the delightful pepper and shallot flavours. I can't wait to make it with the heat next time lol.

I currently live in Australia where the cheese is pretty decently priced due to it being locally made. Previously, I used to live in Dubai where you had access to local Arab, Indian, or Mediterranean cheeses like feta, Halloumi, Paneer, and quark. Other European cheeses cost an arm and a leg.

The first time I tried blue cheese, I had in a pear and blue cheese pizza. While I liked the flavour, I don't think I would see it again in any other dish because I find it too funky.

Great work Josh. I've experienced the rarer and more epicurean delights and enjoyed bringing them to my friends, but in these times it's more important to keep bringing friends together with some creative flavors even if your wallet is not so fat. I would add or exchange for the cream cheese a reasonable brie or camambert to the cheap and roll with it. Can't imagine that would not satisfy a group of good friends and make a party.

Gives me some ideas for where to go cheap and where to kick it up a notch! Take it easy on the cheeses, try for a nicer apple (Granny Smith? please -- try Pink Lady, Rockit, Honeycrisp, or my current favorite, Cosmic Crisp), go good with the nuts (pistachios and cashews for me), and try something cheap but fancy with the cream cheese. Based on this cheaper options i got one together for about 25 bucks with plenty of left overs for a second round, so it will make about total 6 big servings (american servings lol) Holy crap it was insanely good!! My dad discovered he loves brie. My mother could not stop eating. Homemade pickled onions are a revelation. I honestly dont think my tastebuds could handle the expensive one. I have done this for years. The same with gift baskets at Christmas. A lot cheaper, and you get more product.

I can really respect doing things well on a budget. Would you do a video on a similar subject tailored for Summer fruits and a pitcher of Sangria? If not it's cool cuz I am still doing this for a dinner alternative.

I have actually done a board and it cost me a pretty penny but I will not lie, I'd do it again and it served my large group of d&d players. I even ordered a board once at a restaurant and it was great but I liked mine almost as much as the one that I paid $30 to feed one person.

Mt wife and I eat an even cheaper version of these every few days as a snack to go with binge watching.

Literally the same principle, just with Aldi brand stuff. Still excellent and incredibly easy.

Added bonus of being healthier than popcorn or a bag of chips.

God this makes me appreciate food pricing here in New Zealand. All of the prices you quoted are basically what we pay, in NZD though so virtually half the price.

Really, you find food prices in NZ cheap? I found the supermarktes prices in NZ quite expensive. Way more expensive than in Europe (Netherlands or Germany).

@alana froh yeah I think for these type of foods, NZ is well priced compared to the US. I think Europe is even better yet with their pricing. As with anywhere, really depends where you shop 😊

You can also purchase packets of Finley sliced varieties of the expensive Meats and I have found I can be able to get two or three of those instead of the whole thing. Then mix it with some of the less expensive Meats and it comes out lovely.

My local grocery store (specializing in international foods) sells their deli ends at a highly discounted price....$1-3 on 1 package of mystery meats and cheeses. I'm spoiled. Only shame is sometimes it's just baloney 🤣. It's usually a delightful assortment though.

Another idea for the cream cheese: my mom makes what she calls “Jezebelle” sauce. Mix blackberry (or whatever fruit) jam and horseradish to desired zippiness. Pour over cream cheese. TRUST ME!!!

i made a cheese board for my friends this summer, pretty cheap. i had medium aged cheddar, brie, goat cheese and i bought one of those variety pack of crackers for like.... 4$, then i used dried cranberries and some almonds that i already had at home with dandelion jelly i made in the spring and honey. they were rly impressed with it :)) (some of my friends are muslim hence the lack of hams and stuff bc they're mostly pork based)

Serrano and prosciutto ham are made just the same as "country ham" in the US. Just slice it super thin.
Polish supermarkets have some good sausages and usually pretty cheap. Also they often have a soft cheese with chanterelle, think Laughing cow with mushroom that are nearly as tasty as truffles. If it is a really good Polish supermarket they will have a delightful smoked sheep cheese from Zakopane. Don't buy the smoked cow cheese, it is rubbish.
A Swedish thing is to have pickled herring and caviar on a charcuterie board at Christmas.

Every fall we do a hot pepper jelly, and a basil onion jelly we give as gifts, and serve with cream cheese for Christmas/new years (when we can have people). Would be a perfect fit on the Charcuterie board.
