I am considering an Acorn komado and have seen stainless steel heat diffusers out there for the grill. What are the advantages and disadvantages of going with ceramic or steel for the diffuser and what do you recommend?

I’ve seen some ceramic heat deflectors that are specifically made for Kamado cookers that have legs on them. Do you think if the legs are down, instead of pointing up, we would be able to use that in a Weber kettle?
