Here's some adjustments for each build (Warning: Wallpost)

1st Build: replace twinblade talisman and dragoncrest greatshield talismans with Millicent's Prosthesis and Rotten Winged Sword Insignia, they stack with each other providing much higher damage. Replace helm with White Mask, it gives similar effect of Lord of Blood exultation and stack with it. Regarding the weapon choice, Godskin Peeler twinblade with seppoku ash-of-war and blood infusion is much better. You lose the ability to buff the weapon through the incantation, but gain native bleed build-up, which will also scale with your arcane stat. Also Seppoku ash-of-war procs both the talisman and White mask on use, and increases attack power and bleed procs. About the stat spread, go for 40 Vigor (softcap), minimum Mind (you dont need much as the only mana loss is from seppoku), 50 Endurance (softcap), 17 Strenght (required for the weapon), 50 Dexterity (you get to 55 with Millicent talisman, and 55 is the softcap). Dump all the other points in arcane, since you wont be using incantations, both INT and FAITH are useless.

2nd Build: You don't need to +25 the shield, you already get 100% stamina reduction at +23.
Replace all talismans but Greatshield Talisman with Great Jar's Arsenal, Erdtree's Favor +2 and Spear Talisman. This way you can achieve medium roll, and you won't lose much on physical damage reduction, as the Greatshield Talisman will give less reduction with heavy armor sets.
I'd change the weapon too. You have ample choice of spears, greatspears and Heavy-thrusting swords, just avoid an arcane scaling weapon if you don't want to invest points in it.
Against non-physical damage dealing bosses or enemies, you may swap Spear Talisman with a talisman with gives you specific damage reduction (like Lightning/fire/holy/magic).
For stat spread, go for 50 VIG, 10 MIND, 50 ENDURANCE. Adjust the damage stats based on the scaling of your weapon of choice.

3rd build:
Again, replace two talismans (I'd choose crimson dagger and crepus vial) with Millicent's Prosthesis and Rotten Winged Sword Insignia, you get much more damage. You only need the Chest part of Black Knife set to keep the silencing effect. Replace the helm with White Mask.
For the stat spread, 40 Vigor is enough (softcap), 10 Mind is okay, 50 Endurance is good too. You only need 7 STR to equip those daggers, so you can keep STR to minimum and use throwing knives (Kukris are good) instead of bow and arrows for ranged damage options, as they won't make you gain weight. Keep 50 Dex, as the talisman will make you hit the softcap (55), dump all other points into arcane till you hit 55 (softcap), after that you can choose either STR for slightly higher attack power (daggers have low Str scaling) or Mind, for increased spam of bloodhound step.

4th build:
Argh.

Let's start with talismans: Old lord talisman is useless here. It increases the duration of buffs (like golden vow) and weapon incantations/ash-of-war (like bloodflame blade or seppoku).
You can get 10 memory slots in total, + 2 from Moon of Nokstella talisman, which you can put in place of Dragoncrest Greatshield.
Regarding the armor set, apart the helm, Royal Knight Set is your go-to.
Let's get to the stat spread: 60 Mind is useless. You need as high as 220 total FP. Why 220? It's the mana you recover through a +12 cerulean tear, meaning that you can't possibly regain more than that 220 FP.
Instead you can put some of the extra points in Endurance, as casting while in fight will deplete Stamina aswell.

Regarding the weapon choice: this is the most difficult part. At lvl 150 Lusat's Staff is damage-wise the best, but will increase your FP costs, so consider using it for bosses, as you can use it pair with Cerulean Hidden Tear on the Physick Flask, for 10 seconds of 0 FP costs.
At higher levels, you can consider investing 80 points in both INTELLIGENCE and 60 in FAITH, as the Prince of Death staff will give you more Sorcery scaling than any other staff as it makes sorcery scaling grow based on both INT and FAITH.

Regarding spell choices.
You want to keep Comet Azur, Stars of Ruin and Loretta's Bow.
For quick damage go for Carian slicer (melee damage) and Glintsone Icecrag (ranged damage).

Add Adula's Moonblade, as it is one of the best spells in the game, also frost procs will reduce the target's resistances, thus increasing your overall damage.

Add Carian Phalanx, as it provides good poise damage and can hit invisible units (like scarabs or black knife assassins), and can protect you from surprise attacks.

Add Terra Magica. Any mage build with comet azur without terra magica is troll.

Rock sling is much better than Meteorite of Astel: it has minor homing, hits more consistently the right target, and hitting all 3 rocks with provide very high poise damage (you can stun for the crit every 3-4 casts on most enemies, providing that they survive 3-4 casts).

For bosses, consider using a different summon, like Tiche, Oleg or Greatshield Soldiers. You will bulldoze through most bosses with Terra magica > Flask for infinite FP > Comet Azur, so you need a summon which can keep aggro. Tiche is especially good as she will fire an attack as soon as you summon her, taking aggro off you right off the bat.

Been playing since 2011 (late to demons souls), and I appreciate skill builds but yep, this is the best "to be summoned" guy I have

I'm Level 149 with a Full Mage. My build its similar but I have added some stuff to the build.

With Radagon Soreseal boost included: Vigor 42 Mind 40 Endurance 28 Dex 18 INT 80

Right Hand Staff: Carrian Sepctre +10, Lusat +10
Left Hand Staff: Meteorite Staff and Staff Of Loss (Boost invisibility spells by 30%, Night Comet becomes the best spell)

Snow Witch Hat(10% to frost spells like adulas Moonblade) with Veterans Armor (Poise goes over 60 on med load)

Talisman: Radagon Soreseal(+5 to Vigor, End, Dex) Graven-Mass, Radagon Icon and Godfrey Icon (Boost chargeable Spells)

Strategy:

Using Carrian with Staff of Loss and using Night Comet the most one shot most low enemy and using Carrian Spectre special attack when close or Adulas Moonblade. Switch left hand Staff to Meteorite Staff when using Rock Sling or Meteorite of Astel.

When Going against a Boss and using Physik with Boost to Magic and 10 second of Unlimitted FP I switch to the Lusat for higher damage and Comet Azur or Meteorite of Astel. Then lots of night comet or adulas moonblade.

More tips for a tank build:

Cross-Naginata, Antspur Rapier and Godskin stitcher are all (imo) better options for weapon choice. With the Naginata and Antspur can stack multiple status ailments (cold/bleed on the cross, bleed/rot on the Antspur) and the Godskin scales with Strength and can be changed to a heavy AOW if you face a boss that is immune to status ailments.

The spear talisman is also great as most of your attacks count as counter attacks and its a 10/12% free damage increase.

I also like to put bloodhound step on my weapon so I can quickly get away if I'm getting swarmed, my stamina breaks or I need to heal. Having to fat roll away or even sprinting doesn't quite cut it in some situations.

Also the mohgwyn sacred spear is fantastic end game, the trouble with greatspears is they take more stamina to attack with and also don't build up status effects as much as a quicker weapon.
