Depicting Italy Is waaaay to difficult , there are a lot of things that you say that are far from the reality of where i live, right in the center of Italy, but It's more than fine, you are doing a great job at giving a general idea of Italy without using big stereotypes and that Is a breath of fresh air.

For a fact, a lot of discussions are made for "Polentoni" Always seen as cold and attached to Money , and "terroni" way to passionate and obnoxious (of course, this Is not a definition for each individual) but the center, even if It hasn't a stereotype Mame, Is Always seen as a Place where people keep all things for themselfs , very warm and welcoming when becoming Friends with them, but very difficult to approach .

Even then , dividing Italy in only 3 main parts (south, North, center) doesn't give Justice to the variety of dialects, traditions and foods we all have.

Even between comuni , here in Umbria , we have a lot of competition , we Always think that we are Better than the others, but none the less , we are usually on good terms when the time comes to communicate.

Just wanted to give my two cents about It, to experience the true Italy, you must visit the whole boot, there is no way around It , each region feels like a totally different world (once went ti Sardegna, Just the landscape was so unusual that It almost felt alien )

@Ricordi Aerei only parmiggiano instead of pecorono is not 100% traditional, but it is still good. We prefere to not, but it's ok.
Garlic or onion simply ruin carbonara. Well, actually even in Italy some one use onions ... but every family has a stupid member in it. Dont 'do it. :P
Panna or margarina is a deadly sin. It is like cheating and still lose the game even if you are cheating. :P
It's not easy to create the "cream" with eggs and cheese, I can understan it ... but that's the real deal. That's carbonara secret.


I think you are confusing history with recipe. ;)
Recipe is clear since the begin: eggs, pepper, cheese and fatty pork meat.


About the history, there are three main hypotesis about it's origin.
1. From Naples: we can find pasta with "cream" made mixing eggs, pepper and pecorino in an ancient book from 1837, autor Ippolito Cavalcanti.
2. Miners from Abruzzo: coal means "carbone" (carbonara name root). Poor people from coal mine used siple ingredients to cook "cacio e ova" (another traditional plate based on "cream" made from eggs and cheese). Oil was too expensive, so they used sometimes bacon's fat... and the way to preserve bacon is pepper.
3. Ally in world war II. Italy was poor at that time. Americans gave to our soldiers bacon and leophilized eggs. We do not have any proof of the name "carbonara" until 1944, from a cook a soldier named Renato Gualandi... only after him, it spreads in the capital, Rome.
It is possible that he knew ancient recipes from Naples or Abruzzo, and mixed american's ingredients with that idea in his mind.


So, even if the origin is not totally clear, in all these stories we can find some common rules: eggs, pepper, cheese (pecorino from rome or parmiggiano reggiano), and fatty pork meat (becon or guanciale).

Well at the via plebiscito at Catania you can see a lot of Grilled horse meat, and I can say that is real good
