In 2000, Mundy was dropped by Epic while working on his second album, The Moon is a Bullethole, which was about to be recorded. Although a four-track EP of that title was released, much of the material for the cancelled album was eventually incorporated into 24 Star Hotel, Mundy's 2002 album.
24 Star Hotel was released on Camcor Records - a label Mundy himself set up, primarily funded by his royalties from the Romeo and Juliet soundtrack. Camcor Records is named for the Camcor River, a popular fishing spot, which runs through the town of Birr. The album contained the song "July", an ode to the joys of the Irish summer, which gained heavy airplay throughout the summer months, and is, for Irish audiences at least, Mundy's signature tune. Other record labels based in Birr include Roesy's Blue Coak Records and Canabrism's Podcomplex Records, both artists being former schoolmates of Mundy.
In 2003 Mundy also contributed to Afro Celt Sound System's album Seed, and to Even Better than the Real Thing Vol. 1 with a cover version of the Shakira song Whenever, Wherever, only with the two words in the title switched around.
In May 2004, Mundy released his third album, Raining Down Arrows, which entered the Irish album chart at number 1. The album has since gone platinum.
Mundy's collaboration with Sharon Shannon on the track "Galway Girl" has become a cult hit recently, thanks to RTÉ 2fm playing the track every Friday since Will Leahy took on the drive time show.
Mundy is the cousin of Fine Gael TD Olwyn Enright and the nephew of long-standing former TD and Senator Tom Enright.
Gin & Tonic Sky
Mundy Lyrics

I put you on a train,I'd never see you back again
CHORUS
'cause you were leaving,I couldn't fathom why
And the moon was a slice of lemon in a gin and tonic sky
Gin and tonic sky
Sayin' "I'm takin' her away and don't come running after"
You gave me one last cold kiss, colder than steel
This would be the last time
And my tears were like vinegar burning in my eyes,
Burning in my eyes
CHORUS
Please swear you won't take her from me now
And I always said train stations gave me a lonesome feeling
'cause from someone somewhere they were stealing, stealing
Na na na na na, na na na
And to hear the trains arms a voilently pumping
And a little ruby heart inside me a thumping,
I was my own man now,a soldier on a battle field,
A grain of sand on a gold dust beach,
A one man band with an empty open hand,
A one man band with an empty open hand
CHORUS(x2)
Gin and tonic sky,gin and tonic sky,
Gin and tonic sky,gin and tonic sky
Sky oh! gin and tonic sky
The song "Gin & Tonic Sky" by Mundy is a heart-wrenching tale of lost love and farewell. It talks about a rainy evening when the singer has to bid goodbye to his beloved and put her on a train, never to see her again. The chorus speaks of the confusion and despair that the singer feels when he is faced with the fact that she is leaving him. The moon, which is usually seen as comforting and soothing, becomes a slice of lemon in a gin and tonic sky, changing the meaning of the moon to something sour and unpalatable. The finality of the goodbye hits him hard as he watches her leave, and his tears are like vinegar, burning his eyes. It's evident that the singer is deeply affected by her departure and doesn't understand why she's leaving.
The second verse speaks of the train taking his love away, and he almost feels like the engine is taunting him. She gives him one last cold kiss, and he can feel the finality of their split. His tears continue to flow, and he wishes she would come back to him. The train station serves as a reminder of his loneliness, and the trains take people away from each other, stealing happiness and love. The final verse shows how the singer feels like he's on his own now, like a soldier on a battlefield or a grain of sand on a beach. He's left with an empty hand, and the gin and tonic sky serve as a reminder of his unfulfilled love.
In conclusion, "Gin & Tonic Sky" is a hauntingly beautiful song about lost love and the pain of saying goodbye. The lyrics are vivid and full of emotion, painting a picture of a heartbroken man struggling to come to terms with the loss of his love.
