This is my favourite part of the movie, because it's so terrifying. And while Joker had a reason to get the guard's goat, still, just the way he starts talking about the ones who were cowards, as if this is just normal chit-chat, makes it even more frightening.

He locked himself in a hotel room all alone, purposefully filling his head with dark thoughts and writing psychotically in a diary in order to truly become the Joker. That's why his performance is so legendary. He put himself into that mental state. And it killed him.

He's a master manipulator. Clearly he knows what will rile the cop up, that's why he's saying these things. He would have tried continuously to rile him with his words and wisecracks. Everyone has a breaking point. Some have shorter fuses than others. The Joker is expert at psycho-analyzing people. Remember the scene with the mobsters and Lau near the beginning of the movie? "I know the squealers when I see them and...[points to Lau on the television]". He clearly knew this cop was the type who would have a short fuse and he knew just what to say to rile him up. The only solution was to put Mahatma Gandhi or the Dalai Lama in the room to guard him! XD. And I don't even know if they would have survived that long with the Joker's forked tongue...
