Originally, Gregorian was conceived as a more pop-oriented group in the vein of Enigma. Under this concept, they recorded the 1991 album Sadisfaction, with lead vocals provided by The Sisters of Oz: Susana Espelleta (Peterson's wife at the time) and Birgit Freud. However, this was the only album in that style.
In 1998, Peterson and his team Jan-Eric Kohrs, Michael Soltau and Carsten Heusmann re-invented the project to perform popular songs in the Gregorian style. The criteria for song selection were strict; in order to be considered, a song needed to be translatable into the 7-tone scale. For each album, songs were carefully chosen in addition to original songs written by Jan-Eric Kohrs, Amelia Brightman and Carsten Heussman. Twelve vocalists - previously acclaimed session and choir singers - were then hired to record the tracks.
Each Gregorian album is initially digitally tracked at Nemo Studios, Peterson's Hamburg studio. The vocalists then record their parts in a church atmosphere with dimmed lights and candles, in order to escape what Peterson referred to in a 2001 interview as the "cold and technical" studio atmosphere.
The concept proved to be successful, and the group proceeded to record several more Masters of Chant albums in the same style. Their 2004 album, The Dark Side, was a slight departure from the others, featuring a darker repertoire consistent with the title.
In 2005, The Masterpieces, a compilation album with a live DVD, was released. A fifth Masters of Chant album was released on 31 March 2006. In 2006, a festive album was also released, titled Christmas Chants. A sixth Masters of Chant album was released on 28 September 2007. In 2009 a seventh Masters of Chant album followed.

On 8 September 2010 the next album, titled The Dark Side of Chant, was announced to be published on 15 October 2010.
The members of the Gregorian choir group are Richard Naxton (Naxos), Johnny Clucas (Johnny), Chris Tickner (Chris T.), Richard Collier (Rich), Gerry O'Beirne (Gerry), Lawrence White (Lorro) and Rob Fardell (Rob F.).
Others who contribute to the vocals or sound of Gregorian are Sarah Brightman (under the pseudonyms Hepsibah or Sarah Hellmann), Amelia Brightman (Sarah Brightman's younger sister), Frank Peterson, and staff of Nemo Studio among others.

Gently passing, they kiss your tears and your cry
See the wind can't stop me blow your hair from your face
And the rain come falling down in its crazy way
Oh
Still I'm sad, still I'm sad
Oh, myself, my tears just fall in the dust
Hey, see the wind can't stop me blow time in my heart
And the rain come falling down while we are apart
Oh
Still I'm sad, still I'm sad, oh!
See the stars come falling down from the sky
Gently passing, they kiss your tears and your cry
See the wind can't stop me blow your hair from your face
And the rain come falling down in its crazy way
Oh
Oh, oh, oh, oh
I'm so sad, I'm so sad, yeah
Oh, oh
But still I'm sad
Feeling so sad, feeling so bad, you're making me sad
Breaking my back, ah
Oh, I'm sad, yeah
The song “Still I'm Sad” by Gregorian is a melancholic piece about lost love and separation. The first few lines of the song describe falling stars and how they touch the tears of the person who is crying. The singer reflects on how the wind cannot stop him from thinking of his lost love or the memories he holds. In the chorus, the singer expresses that despite the passing of time, and distance from his love, he is still sad. The second verse is the singer speaking directly to his love, saying that his tears fall in the dust, but they will dry every night they find love again. The singer acknowledges the reality of their separation but professes that the love they share will never change. The chorus repeats with a continued emphasis on the feeling of sadness between the two lovers.
The song reflects on the themes of love, loss, memory, and separation. The lyrics paint a picture of someone who is holding onto memories of a past love that they can’t seem to forget. The wind and the rain are used as a metaphor to suggest that time and distance do not make it easier for the singer to let go of his lost love. "Still I'm Sad" is a song that portrays deep emotion and the pain of separation from a loved one.

See the stars come joining down from the sky
Gently passing, they kiss your tears when you cry
See the wind the summer blow your hair upon your head
See the rain, the falling rain, it's great
Ich bin immer noch Traurig
Still I'm sad
Ich bin immer noch Traurig
Still I'm sad
Alle meine Geräusche, meine Tränen fallen einfach in Tage
All my sounds, my tears just fall into days
They are driving the night will find they are lost
Now I found the wind is blowing time into my heart
When the wind blows hard we are apart
Still I'm sad (still I'm sad)
Trotzdem bin ich traurig, aah
Still I'm sad, aah
Trotzdem bin ich traurig, aah
Still I'm sad, aah

See the stars come falling down from the sky,
Gently passing, they kiss your tears when you cry.
See the wind come softly blow your hair from your face,
See the rain hide away in disgrace.
Still I'm sad.
For myself my tears just fall into dust,
Day will dry them, night will find they are lost.
Now I find the wind is blowing time into my heart,
Let the rain fall, for we are apart.
Still I'm sad,
Still I'm sad,
Oh, Still I'm sad.
