I now buy them frozen, already peeled. Pearl onions. A huge time saver, and very inexpensive, especially if you get the store brand.

Since French Lardons are difficult to get into the U.S., can I use Pancetta or Guanciale (which is also difficult and expensive to get) instead of the Lardons for Beef Bourguignon? I feel that the bacon that they make in the U.S. is still smoky even after blanching it. Thanks.

Yes, tomato paste, red wine, cognac and beef broth are the standard with "hunter style" French poultry dishes where rabbit is a common substitute.

@Evelyn Saungikar remember when we could eat raw cookie dough bc eggs weren’t mass produced and had thicker shells to prevent bacteria getting in? Now you can’t even eat raw flour for fear of getting E-coli! I still sneak it, but did get sick one time. Makes me wonder what good the FDA really is…🤔

I think as far as when she was done with the knives, I don’t think they went in a drawer. You’ll notice she put everything under the counter as she was cleaning the area. I’m guessing it was open shelving with something to put the smaller items in, like a dishpan

I know freaked out a little when she put all the knives back in the drawer. I’m sure it’s all washed later, I hope. Have cooked this for friends and it was delicious.
