After their first 1999 self-titled album, their subsequent album L’homme à tue-tête released in May, 2001 gained them media acclaim and public popularity. By the time their 2004 album Des singes et les moutons enhanced their repertoire, they were selling out venues such as La Cigale and touring internationally. The band acknowledges influences from traditional French and Irish music, rock, klezmer, and many styles that are considered dance hall music, such as gypsy jazz, tango, waltz. Music critics and fans admire their ability to mix these different styles into an exuberant, cohesive whole.
They are known to be friends with bands like La Rue Kétanou or Les Ogres de Barback.

The lyrics of "Plan-plan" by Debout sur le zinc express a sense of apathy, disillusionment, and emotional detachment. The singer describes feeling devoid of vocabulary and unable to speak sincerely. Nothing interests or affects them anymore, as they have become colder than glass, no longer touched by anything. They criticize the monotonous and predictable nature of life, hidden behind false appearances and lacking authenticity. The singer feels overwhelmed by life's superficiality and its fleetingness, being carried away by empty promises and damaged by the passage of time.
Despite this, the singer reflects on past experiences, specifically mentioning having seen the sea and pursued dreams or illusions until they drowned. However, these aspirations slip through their green fingers, implying the idea that growth or progress is not lasting or permanent. The song continues to emphasize the overabundance of certainty, judgments, and disappointment in people. The singer is perpetually intoxicated, drowning their sorrows and disillusionment without finding solace. They blame their disappointment on false reasons and have lost faith in the genuineness of others.
Overall, "Plan-plan" portrays a sense of emotional emptiness, disillusionment with superficiality, and a longing for something more genuine and meaningful in life.
